The Old Testament is seen as an agreement or covenant, describing the unique relationship between God and His people. God promises to send His Only Begotten Son into the world for our salvation, and to assist us by guiding us to salvation, always respecting our free will. The basic promise of humanity is to correctly use his or her free will to desire salvation, and to return back to God. They must always have good intentions in this regard, and to desire, aspire and seek to do the will of God throughout their lives. God fulfilled His promise in sending His Only Begotten Son to earth. God precisely fulfilled His promise 2004 years ago. It is then, on the night of Christmas, that the Son of God becomes the Son of Virgin, and Gabriel announces the coming of Grace. Από αιώνες μάθαμε να εορτάζουμε τα Χριστούγεννα με ειδικό εορτασμό. Κατάλληλα στολίζουμε από καιρό το σπίτι μας μέσα και έξω, βάζουμε το Χριστουγεννιάτικο δέντρο. Ψωνίζουυμε τα δώρα μας, τα πακετάρουμε ωραία, και τα τοποθετούμε κάτω από το δέντρο. Στέλνουμε τις ευχητήριες κάρτες μας, ψωνίζουμε για το Χριστουγεννιάτικο τραπέζι μας. Νηστεύουμε, εξομολογούμαστε, κι έτσι ετοιμαζόμαστε να υποδεχτούμε τον Ήλιο της δικαιοσύνης, τον Κύριον ημών Ιησού Χριστό μας και στο σπίτι μας και στην ψυχή μας. For there is born to you this day in the city of David a Savior, who is Christ the Lord. This joyous announcement of the Angel is followed by the wondrous hymn of the heavenly Angelic Hosts: Glory to God in the Highest, and on earth, peace, goodwill toward men! God fulfilled His promise to mankind. Christ was born. He attained manhood, and taught the truth of God. He was crucified, and descended to Hades. He was resurrected from the dead and Ascended in glory to the Father. He sent the Holy Spirit into the world on Pentecost. He established His Church on earth, which is the Ark of salvation for all. us praise and glorify the new born child together with the Angelic hosts. Christ is Born, Glorify Him. Christ comes from Heaven, receive Him. Christ is on earth, be exalted. I extend to all my co workers, the parish Council members, the members of all organizations of our beloved community and to all our Parishioners and their beloved families a Blessed Christmas and a Happy, Healthy, Peaceful and Prosperous New Year. May the Blessings of the Babe of Bethlehem be always upon us. With paternal love in the newly born Christ Very Rev. Archimandrite Alexander Kile What about the promises of humanity to God in regards to their own salvation? Almost two billion people on this earth have come to know Christ. They are the Christians of the world. Many of them, without a doubt, make every effort to observe their promise and commitment to God. They correctly use their free will, to do the will of God in their lives. However, there are also others who are led astray and seduced by the charms and attractions of this world, and do not think of their own salvation. There are also nearly four billion people on this earth who have never even heard of, or have come to know our Lord Jesus Christ, and many of them do not even desire to know Him. From this, it is confirmed that although God fulfills His promises to us to the letter in regard to our salvation, humanity has not fulfilled its promise to God in the least. All of you who will read these lines or hear them read, please think seriously about how you lead your life, and the direction you are heading. Please do not forget that only Christ can lead you to salvation, because He is the way, the truth and the life. Peoples of the World, listen to the announcement of the angel to the shepherds from Bethlehem to accept the free gift of salvation from God. Accept Christ into your life. He is the Savior of the world. Christians, hasten to your Churches in repentance and Confession of your sins. Receive Holy Communion and let THE ORTHODOX ICON OF THE NATIVITY OF CHRIST The icon that is on page 1 ( the nativity of our Lord) is a dramatization of the events that took place in the cave of Bethlehem. In the center of the icon is the cave where we see the newly born babe Jesus Christ laying in a manger. Behind Him we see an ox and a donkey, the most humble of all the animals, warming Him with their breath. Next to Jesus, His Mother laying by his side or kneeling in front of Him adoring Him. On the right hand corner, we see the angels announcing the birth of Jesus to the shepherds and on the left hand side we see the three kings (Magi) who are following the Star, located at the top center part of the icon. At the bottom of the page, we see Joseph on the left and a midwife who is bathing the baby Jesus on the right. The significance of this Orthodox icon is that Christ s face is not that of a baby, but of an older child, showing us that Jesus Christ pre existed before time. He is the Alpha and the Omega.

Γι αυτό και οι μη Ορθοδοξοι βάζουν διαφημίσεις να κρατήσεις τον Χριστό μέσα στα Χριστούγεννα. Πολλοί λίγοι είναι αυτοί που κάθονται οικογενειακά, στολίζουν το δέντρο τους ή κάθονται και μιλάνε για το μεγάλο σωτήριο γεγονός για την ανθρωπότητα, αυτό της Γέννησης του Χριστού. Όλοι έχουν δικαιολογίες, πρέπει να ψωνίσουν, να βρεθούν σε μια Χριστουγεννιάτικη συγκέντρωση ή χορό πριν τα Χριστούγεννα. Όλα τα ήθη και έθιμα είναι ωραία όσο δεν απομακρύνονται από τη πηγή τους. Πριν χρόνια, άλλος ήταν ο εορτασμός εδώ και στην Eλλάδα, και άλλος είναι σήμερα. Τα Χριστούγεννα ήταν κατ εξοχήν οικογενειακή γιορτή. Όλα τα μέλη από κοινού μαζεύονταν σ ένα σπίτι και γευμάτιζαν όλοι μαζί. Δόξα τω Θεώ, πολλές οικογένειες ακόμη τηρούν αυτό το έθιμο. Εάν ασχολούμαστε μόνο με το στολισμό, τα ψώνια, και μαγειρέματα και δεν έχουμε φροντίσει πνευματικά τον εαυτό μας, όλα είναι άδεια, όλα είναι ψεύτικα. Αλήθεια, τα Χριστούγεννα δεν είναι γιορτή για τα παιδιά μόνο, που σήμερα πολύ θέλουν να την χαρακτηρίσουν παιδική εορτή λόγω των δώρων. Ο άνθρωπος που συνειδητοποιεί ότι Χριστούγεννα είναι γιορτή αγάπης, ότι ο Θεός τόσο αγάπησε τον άνθρωπο που έστειλε τον μονογενή του Υιό για να τον σώσει και σκεφτεί την ταπεινότητα του Υιού του Θεού στην φτωχή την φάτνη με μοναδική ζεστασιά την αναπνοή των ζώων και την αγκαλιά της μητρός Του της Παναγίας. Τότε θα λογιστεί το μεγαλείο της προσφοράς του Θεού Πατρός σε αυτόν ως άνθρωπον. Τότε θα προσπαθήσει να ευαγγελίζεται στο σπίτι του αυτή τη δωρεά. Τότε θα αρχίσει να καθαρίζει και την δική του φάτνη, την ψυχή του, μέσω εξομολογήσεως και νηστείας για να υποδεχτεί κι αυτός τον Υιό του Θεού, το εσπαργανωμένο νήπιον της φάτνης της Βηθλεέμ. Τότε η εορτή των Χριστουγέννων, ο στολισμός, τα δώρα και το Χριστουγεννιάτικο τραπέζι θα έχουν μεγάλη συγκινητική σημασία. Δεν θα είναι απλώς συνηθισμένη δουλειά και υποχρέωση. Τότε το άστρο της Βηθλέεμ θα σταθεί επάνω μας και θα υποδεχθούμε τον εν τη φάτνη σαρκωθέντα και ενανθρωπήσαντα Θεό μέσα μας και με το φώς Του θα λαμπρύνει κάθε σκοτεινή γωνιά της ψυχής μας. Τότε τα φώτα θα λάμπουν πιο λαμπρά πάνω στο δέντρο, εμπρός στο σπίτι μας, διότι θα αναγγέλλουν τη Θεία Γέννηση, το μεγαλύτερο δώρο σε εμάς τους ανθρώπους. Τότε τα Χριστούγεννα θα είναι εορτή για όλους, όχι μόνο για τα παιδιά. Λοιπόν, φέτος, εάν δεν εορτάσαμε μέχρι σήμερα την εορτή των Χριστουγέννων με αυτόν τον τρόπο, εορτάστε την έτσι και θα δείτε ότι ο Χριστός, το παιδίον της Βηθλέεμ, θα κατασκηνώσει μέσα σας και στο σπιτικό σας και θα έχετε μια εξαίρετη, χαρούμενη, και ευλογημένη εορτή των Χριστουγέννων. Όλα θα λάμπουν και θα είναι γεμάτα από χαρά και αγαλλίαση. Στους συνεργάτες μου του Εκκλησιαστικού Συμβουλίου, στις οργανώσεις της κοινότητάς μας και σε όλους εσάς εύχομαι ευφρόσυνα Χριστούγεννα και ευτυχισμένο με υγεία, προκοπή και ευλογία παρά Θεού Νέον Έτος. 5 The Voice of St George - Christmas 2004 Page 5 President s Message/Mhnuma tou Proedrou Dear Parishioners and Friends of the Saint George Community This message comes to your home to wish you and your families every blessing from our Lord Jesus Christ and share the joy of the holiday season with you. The Priest, the members of the parish council and all the organizations affiliated with our church, work very hard all year long to keep our Greek Orthodox Faith and our beautiful traditions alive. We thank God for all the faithful Christians who support all the efforts that are made here. I would like to take this opportunity and remind everyone that our church needs everybody s help in order to remain a strong and thriving community. We encourage you to get involved and share your time, talent and treasure with your fellow parishioners. We are blessed to be part of one of the oldest and biggest communities of New Jersey. A great deal is accomplished so far, and we are positive that the best it yet to come! In closing, I would like to wish all of you a Merry Christmas and a happy, healthy and prosperous new year. Alexander Kile, Archimandrite Christmas being one of the most important family feast days in the Christian world throughout the ages, has many traditions in different parts of the world. These traditions include, decorating, gifts, cooking and ceremonies. I am going to touch upon some of these traditions and bring them to you. There are three main characteristics which are connected to Christmas all over the world. The Nativity scene, the Christmas tree, and Santa Claus. Aside from these three characteristics there are more local traditions which vary from country to country. THE NATIVITY SCENE THE NATIVITY SCENE first appeared in the 4th century in Spain. Christian religious books were forbidden to be read, I mean manuscripts and the Bishop of Cordoba did the First Nativity Scene for his people to understand how and where their Savior was born. After Christianity was recognized as an official religion, the Nativity Scenes developed in the West. In Spain, Italy, Germany, France, and Austria, competitions were held to determine who is going to do the best Nativity Scene. The Roman Catholic Church puts up a Nativity Scene in their churches and during the midnight service the priest with a procession brings the baby Jesus and places it in the manger, in the Nativity place and all the bells ring announcing the Birth of Christ. From this tradition many homes have the nativity scene located under the Christmas tree or in a central place in their living room. In the Eastern Church, because the 8th Ecumenical Synod forbids statues, we have the NATIVITY Icon. It depicts a cave in which the Virgin Mary is lying down surrounded by animals. Baby Jesus is wrapped in linen, and His face looks like that of an older baby not like a newborn, because God pre existed from the beginning of time. On the top of the cave is the star, to the left are the shepherds with the angels, and to the right (which is the East) one can see the three Kings following the star or presenting their gifts. THE CHRISTMAS TREE The Christmas tree comes to us from the Gospel from the family tree of Jesus Christ, which is read the Sunday before Christmas in the Orthodox Church. During Byzantine times, as the manuscripts testify, Christmas trees were placed in the churches and instead of ornaments they had the prophets icons. At the bottom of the tree, there was the icon of Prophet Jesse, on the top a star, and in the middle of it the icon of Christ blessing with His two hands. Even today, the Ecumenical Patriarch wears that sakkos called ʺO Sakkos Tou Iessaeʺ on Christmas. The mantle of Jesse is embroidered with gold threads on burgundy velvet and depicts a tree with the Prophets and Jesse at the bottom and Christ on the top. After the fall of Constantinople and occupation by the Crusaders during 13th century, all these items found in the churches were transferred to Italy, especially to Venice. When the Byzantines took over Constantinople they found the city empty of all its treasures and relics. Thus, slowly, the tradition faded out. In the Western Church however, the tradition of the Christmas tree flourished, especially during Renaissance. Not only did churches decorate Christmas trees, but so did the town squares, the shops and the houses. The pine tree was chosen, imitating the Cedar of Lebanon, which is a tree that never loses its leaves but stands still during the strong winds of winter. This is symbolic of the strength one should have during the New Year in order to face any problems that may arise. SANTA CLAUS The name Santa Claus refers to Saint Nicholas, in German Sankt Niklaus, that eventually became Santa Claus. He is a very famous Saint of the Church who lived during the last days of the Christian persecution era in the 4th century in south Asia Minor, in a place called Myra. He spent all his wealth by giving to the poor and to the orphans, and by helping all those in need. Because of his spirit of generosity he was known all over the world, especially in the West. In the East, we celebrate another great father of the church, St. Basil, who lived three centuries after than Saint Nicolas, in Caesaria of Asia Minor. He built orphanages and he also helped the orphans, the widows and all in need. He threw gold coins from the windows to the poor girls who needed dowries to get married. His feast day is celebrated on January 1st. In the orthodox countries gifts are distributed on this day instead of on Christmas. There is an old tradition where the children would put their shoes out in front of the door on New Year s Eve with a letter to St. Basil asking him to leave them a gift. In the morning when

7 The Voice of St George - Christmas 2004 Page 7 they would wake up, the first thing they would do is to open the front door and see the gifts that ʺAghios Vasilisʺ had left for them. On the Mediterranean side of Myra, St. Nicholas went to the North Pole and so everybody changed the tradition as it suits to them. CHRISTMAS SONGS Another old tradition is caroling singing Christmas songs and hymns that announce the birth of Christ. This tradition still continues in Europe and is strictly kept alive by the children who go door to door on Christmas Eve, New Year s Eve and Epiphany day and sing the carols and get tips from people. People perceive it as a good sign for the children to sing at their door steps, they consider it a joyful event and a sign of good fortune. In some villages not only do the children go caroling but the adults also form a choir to go from door to door and sing the carols. People enjoying the songs treat the carolers with homemade wine and sweets. The food tradition, the drinks, the sweets and the main courses with the appetizers not only vary from country to country but from region to region and from village to village. The Christmas and the New Year s table is always rich in quantity and in decoration. Usually, the Greek tradition is to eat pork on Christmas and turkey on New Year s eve but also lamb or sirloin steaks are consumed. The old tradition is pork chops fried and died out with red wine. On Christmas Eve, it is also a tradition to eat stuffed cabbage leaves representing Christ wrapped in the manger, and the rice a sign of blessings of prosperity. Wine and other beverages are consumed to celebrate the event. On New Yearʹs Day, a special cake called Vasilopitta, the cake of Saint Basil, is cut at every house hold. A gold coin is placed in the cake and is cut into triangle pieces for Christ, for the Virgin Mary, for St. Basil, for the house, for the business, for the father, for the mother, for the children, and so on. Whoever gets the coin in their piece, is the lucky person of the year. This tradition comes from St. Basil for when he was distributing loaves of bread to the poor he was putting in a gold coin to help them financially. There are many traditions related to Christmas, New Year and Epiphany. On Epiphany the household has to be blessed by Holy Water by the priest so that it is watched over by God the entire year. The Holy Water (agiasmo) is prepared and read with special prayers in the church on the eve of Epiphany, January 5th. There are also carols for Epiphany that the children sing and go door to door. The Christmas tree is taken down after the 7th of January, which is the feast day of Saint John the Baptist. Until the 6th century, Christmas and Epiphany were celebrated together on January 7th, as the Armenian and the Coptic Churches celebrate. After the 6th century, Christmas started to be celebrated on the 25th of December. The Greek Orthodox Church up until 1923 was with the old calendar and Christmas was celebrated on January 6th. In 1923 the Ecumenical Patriarchate and the Church of Greece started the use of the New Calendar.

8 Page 8 The Voice of St George - Christmas 2004 ΓΙΟΡΤΙΝΑ ΕΘΙΜΑ ΚΑΙ ΠΑΡΑΔΟΣΕΙΣ ΑΠΟ ΤΗΝ ΚΩΝΣΤΑΝΤΙΝΟΥΠΟΛΗ: Αρχιμανδρίτου Αλεξάνδρου Κιλέ Θα σας διηγήθω τα ήθη και τα έθιμα της Πόλης όπως τα έζησα εγώ μέχρι το 1974, οπότε και αναχώρησα από την γενέτειρά μου. Οπως θα γνωρίζετε, στην αρχή του περασμένου αιώνα ο ελληνισμός της Πόλης έφτανε και τους 500,000 κατοίκους. Το κέντρο της ορθοδοξίας από τον τέταρτον αιώνα ήταν το Οικουμενικό Πατριαρχείο που βρίσκεται εδώ. Από το 1453 η Πόλη ήταν πρωτεύουσα της Οθωμανικής Αυτοκρατορίας μέχρι το 1923 καθώς και παγκόσμιο κέντρο εμπορίου. Η ομογένεια ήταν αναπτυγμένη με ιδρύματα, εκπαιδευτήρια και πάνω από εκατό εκκλησίες, αγιάσματα, μοναστήρια ή και προσκυνήματα όπως: η Μεγάλη του Γένους Σχολή, το Ζωγραφείον Λύκειον, το Αγίασμα της Ζωοδόχου Πηγής, η εμπορική σχολή της Χάλκης, το ορφανοτροφείο της Πριγκήπου, η Πατριαρχική Θεολογική Σχολή της Χάλκης, μορφωτικοί σύλλογοι, ωδεία κτλ. Παρά τις δοκιμασίες και τους διωγμούς που υπέστη η Ελληνική μειονότητα, παρέμειναν στην Πόλη αρκετοί Ελληνες που ονομάζονταν από τους Οθωμανούς «Ρωμαίοι», ή κοινώς «Ρωμιοί». Σήμερα έχουν μείνει μόλις 2000 περίπου Ελληνες (Ρωμιοί) στην περιοχή της Πόλης. Οι Πολίτικες παραδόσεις έχουν την ρίζα τους στο Βυζάντιο. Οι νύχτες των Χριστουγέννων πολλές φορές ήταν χιονισμένες τα παλιά τα χρόνια. Το βράδυ της παραμονής των Χριστουγέννων υπήρχε ατμόσφαιρα γαλήνης και θρησκευτικού μυστικισμού. Ο κόσμος προετοιμάζονταν για τα Χριστούγεννα στολίζοντας δέντρα και αγοράζοντας πολλά τρόφιμα. Τις παραμονές των Χριστουγέννων η αγορά του Πέρα και της Πόλης, το τσαρσί και το Μπαλίκ Παζαρί, ήταν γιομάτα από Ρωμιούς που ψώνιζαν παστουρμά, λακέρδα, ξηρούς καρπούς, σουτζούκια, αλλαντικά, χοιρινές μπριζόλες, κοτόπουλα και άλλα κρεατικά και μη, για το γιορτινό τραπέζι. Στο δρόμο, οι τσιγγάνες στα καλάθια πουλούσαν τα κόκκινα, κυρίως, στολίδια των εορτών για τα σπίτια, αγκάθινα φύλα με κόκκινους καρπούς. Την παραμονή των Χριστουγέννων οι νοικοκυρές μαγείρευαν και η οικογένεια μαζευόταν στο σπίτι και ετοιμαζόταν για την εκκλησία είτε τα μεσάνυχτα ή στις 5 το πρωΐ. Στο Οικουμενικό Πατριαρχείο η Πατριαρχική και η Συνοδική Θεία Λειτουργία τελείται το πρωΐ και συνηθίζεται ο Πατριάρχης να φοράει τον ιστορικό Σάκκο του Ιεσσαί, ένα χρυσό κεντητό καφτάνι που εικονίζει ένα δέντρο στην κορυφή του οποίου ο Χριστός ευλογεί, ενώ στην βάση του δέντρου είναι ο Προφήτης Ιεσσαί και στα κλαδιά οι εικόνες των προφητών, συμβολίζοντας έτσι την καταγωγή του Κυρίου Ιησού Χριστού. Από αυτό τον Σάκκο προέρχεται η παράδοση του στολισμού του Χριστουγεννιάτικου δέντρου. Τις πρωϊνές ώρες οι δρόμοι πλημμύριζαν από τους πιστούς που έβγαιναν από την εκκλησία και πήγαιναν στα σπίτια τους. Το εορτινό τραπέζι άρχιζε με την αχνιστή κοτόσουπα και ακολουθούσαν πολίτικα σπιτίσια μεζεδάκια και προπαντός οι λαχανοντολμάδες που εκπροσωπούσαν τον σπαργανωμένο Χριστό στην φάτνη. Το κυρίως πιάτο ήταν η αλανιάρικη κότα με γέμιση ή χοιρινές τηγανητές μπριζόλες σβησμένες με κρασί. Τα δώρα τα δίνανε την Πρωτοχρονιά και όχι τα Χριστούγεννα. Χρηματικά δώρα πέρνανε τα παιδια όταν πήγαιναν να φιλήσουν το χέρι της γιαγιάς ή του παππού και ζητούσαν συγχώρεση πρωτού να πάνε να κοινωνήσουν. Πάντα κάτω από το χέρι οι μεγάλοι κρατούσαν λεφτά και τα έδιναν στα παιδιά. Η ημέρα των Χριστουγέννων ήτανε αφιερωμένη στους Χρίστους και στις Χριστίνες και στις οικογενιακές επισκέψεις και τραπεζώματα. Ήθελα να τονίσω ότι το Χριστουγεννιάτικο δέντρο εκτός από τις φουσκάλες (μπάλες) ήταν στολισμένο με κεριά στο τέλος των κλαδιών, στολισμένων με βαμβάκι, και ανάμεσα στα κλαδιά τοποθετούσαν τις χριστουγεννιάτικες κάρτες που ελάμβαναν από φίλους και γνωστούς. Η παραμονή της Πρωτοχρονιάς ήταν η ημέρα της βασιλόπιτας. Η παρασκευή της βασιλόπιτας ήταν η μοναδική εργασία που συμμετείχαν οι άνδρες. Κάθε οικογένεια είχε μία ορθογώνια ξύλινη σκάφη που έβγαινε από την αποθήκη δυό φορές το χρόνο, την Πρωτοχρονιά και το Πάσχα. Οί σύζυγοι ζήμωναν την πίτα με τα χέρια από το απόγευμα της προπαραμονής για 4 5 ώρες. Μετά ζέσταιναν το δωμάτιο πολύ βάζοντας ξύλα στη σόμπα και μάλλινες κουβέρτες επάνω στην σκάφη για να φουσκώσει όλο το βράδυ η ζύμη. Την άλλη ημέρα το πρωϊ τις έπλαθαν και τις πήγαιναν στον φούρνο της γειτονιάς. Ετσι όλες οι γειτονιές που έμεναν Έλληνες μοσχοβολούσαν μαστίχα και μαχλέπι. Κατά το δωδεκαήμερο έστελναν βασιλόπιτες σε συγγενείς, φίλους και γείτονες. Το βράδυ της καλής βραδιάς, όταν συγγενείς και φίλοι μαζευόντουσαν

9 The Voice of St George - Christmas 2004 Page 9 στα σπίτια για να υποδεχθούν το νέο έτος, κατά τις 6 το απόγευμα βγαίνανε οι παρέες για να πουν τα κάλαντα και οι εισφορές πήγαιναν ή για τα νοσοκομεία ή για τα εκπαιδευτήρια ή για τους μορφωτικούς συλλόγους της Πόλης. Γενικά συνοδεύονταν με ακορντεόν, μαντολίνα και τρίγωνα. Τα Πρωτοχρονιάτικα τραπέζια της Πόλης ήταν πολύ πλούσια σε είδη. Στα καθιστά τραπέζια δειπνούσανε άτομα μαζί, οικογένειες και φίλοι. Η προετοιμασία του πρωτοχρονιάτικου τραπεζιού άρχιζε από την επομένη των Χριστουγέννων. Είχε μεγάλη ποικιλία από ορεκτικά, τους γνωστούς πολίτικους μεζέδες, ζεστούς και κρύους. Περίπου σαράντα είδη. Φέτα τυρί, πιπεράτο κασέρι, αλλαντικά, σπιτίσιο τουρσί, αμπελόφυλλα, τηγανητό αρνίσιο συκώτι, μπουρεκάκια, κοτόπουλο με καρύδια, παστουρμάς, λακέρδα, και πολλά άλλα. Το κύριο πιάτο ήταν η γαλλοπούλα γεμιστή με πιλάφι, ρύζι με κάστανα, εντόσθια, κουκουνάρια και ψιλή σταφίδα. Το αρνί το κυδωνάτο και το χοιρινό με τα δαμάσκηνα και βερύκοκα και πολλά ρύζια για ευλογία (γιά μπερεκέτι). Μέσα το σπίτι κάθε τραπεζάκι είχε ξηρούς καρπούς φρεσκοκαβουρντισμένους για μπερεκέτι. Στα σπίτια που κρατούσαν από την Καππαδοκία της Μικράς Ασίας έριχναν σε κάθε γωνιά ρύζι και βάζανε τα παιδιά σ αυτά τα καλάθια που κουβαλούσαν ξύλα για το σπίτι και τους έριχναν ρύζια και ξηρούς καρπούς γιά ευλογία, για μπερεκέτι. Πάντα τό ρόδι και το άδειο μπουκάλι ήταν πλάι στην πόρτα. Το πιοτό το πιο επικρατέστερο ήταν το ντούζικο, (το ούζο η το ρακί). Ευχές, τραγούδια, μετά τα γλυκά και τα φρούτα. Το πεπόνι που ήταν κρεμασμένο στο ταβάνι του κελαριού από το καλοκαίρι γιά να μή σαπίσει ήταν η σπεσιαλιτέ της βραδιάς, διότι τότε τετοιά εποχή δεν υπήρχαν πεπόνια. Μετά μάζευαν το τραπέζι κι άρχιζαν για το καλό την τόμπολα ή τα χαρτιά και το σβουράκι (πάρτα όλα). Το στολισμένο δέντρο από κάτω ήταν γιομάτο με πακεταρισμένα δώρα και τοποθετημένα σε στολισμένα καλάθια, τα κοφίνια του Αγίου Βασιλείου. Όλοι περιμένουν αυτόν να ρθει γιά ν ανοίξουν τα δώρα. Στα σπίτια που είχαν πολλά παιδιά κάποιος ντυνόταν Αγιος Βασίλης και εμφανιζόταν στην πόρτα μετά τα μεσάνυχτα, και είχαν μεγάλη χαρά τα παιδιά που έβλεπαν τον Άγιο Βασίλη ζωντανό. Στίς δώδεκα παρά πέντε τα μεσάνυχτα έσβηναν όλα τα φώτα και άναβαν τα κεριά του δέντρου με προσοχή, άνοιγαν όλες τις βρύσες για ναρθεί το καλό και η ευλογία στο σπίτι, και στις δώδεκα πετούσανε έξω από το παράθυρο το μπουκάλι για να σπάσει και να πάρει μαζί του όλα τα κακά και την κακοτυχιά. Το πρωϊ οι δρόμοι των ρωμαίϊκων γειτονιών νόμιζες ήτανε φτιαγμένοι από κρύσταλλα γιατί γυάλιζαν από μακριά και οι σκουπιδιάρηδες μετά τα σκούπιζαν χωρίς παράπονα διότι είχαν πάρει πολύ καλό πρωτοχρονιάτικο μπαξίσι (φιλοδώρημα) από τους Ρωμιούς, Έλληνες. (Το σπάσιμο του γυαλιού είναι επίσης έθιμο που κάνουν όταν το φέρετρο βγαίνει από το σπίτι μετά από ολονυχτία, έσπαζαν ποτήρι με μια πέτρα μέσα.). Στο κατώφλι της πόρτας έσπαζαν το ρόδι για ευλογία, για καλό. Το ρόδι ήταν σήμα των οίκων των Βυζαντινών αυτοκρατόρων. Όλοι αγκαλιάζονταν κι ευχόνταν καλή χρονιά. Συγχρόνως έξω τα παιδιά της γειτονιάς χτυπούσαν τους άδειους σκουπιδοτενεκέδες για να φύγει ο παλαιός ο χρόνος. Παντού ακουγόντανε οι σειρήνες των πλοίων που είχαν αράξει στο λιμάνι της Κωνσταντινουπόλεως και καλωσόριζαν το νέο έτος μ αυτόν τον τρόπο. Στα σπίτια ανάβανε όλα τα φώτα και τραγουδούσανε την Αρχιμηνιά και αρχιχρονιά Και έβγαινε η Βασιλόπιτα με δώδεκα κεριά. Ενα κερί για κάθε μήνα. Ο σπιτονοικοκύρης σταύρωνε την πίτα και έκοβε πρώτα για τον Χριστό, για τον Άγιο Βασίλη, για την ακίνητη περιουσία (ένα, ένα) και μετά ένα για το κάθε μέλος της οικογενείας από τον πιο ηλικιωμένο μέχρι τον νεότερο. Όλοι με λαχτάρα περίμεναν να δουν σε ποιόν θα πέσει το χρυσό φλουρί της πίτας και ποιός θα ήταν ο πιο τυχερός της χρονιάς. Αργότερα, πολλοί πήγαιναν να κάνουν ποδαρικό, να μπούν πρώτοι σε κάποιο σπίτι και απο εκεί να πάνε στο αγίασμα της Παναγίας του Βεφά ή στο Γιουλχανέ στον Αγ. Θεράποντα ή κάπου στον Βόσπορο, δεν θυμούμαι ακριβώς το όνομα του αγιάσματος. Να πάνε ν ανάψουν κεριά και να πάρουν αγιασμό για να ραντίσουν τα σπίτια και τα μαγαζιά εκείνη την νύχτα, για να πάνε με την ευχή του Χριστού όλα στο κανούριο έτος. Ανήμερα της πρωτοχρονιάς το απόγευμα πηγαίναν επισκέψεις στους εορτάζοντες Βασίληδες, Βασιλικές και Σουλτάνες. Μετά το γεύμα στα σπίτια, τα παιδιά απήγγειλαν ποιήματα της πρωτοχρονιάς ανεβασμένα σε καρεκλάκια και οι υπόλοιποι χειροκροτούσαν. Αυτά ενθυμούμαι κι αυτά έγραψα γιά τα ήθη και έθιμα των Ρωμιών, των Ελλήνων της Πόλεως, της γενέτειράς μου Κωνσταντινουπόλεως που τα έζησα μέχρι το 1973.

10 Page 10 The Voice of St George - Christmas 2004 THE HOLIDAY TRADITIONS OF THE GREEKS IN CONSTANTINOPLE (Istanbul Turkey) By Very Rev. Archim. Alexander Kile I will describe the traditions and customs of the Greeks of Constantinople as I experienced them until 1973, when I emigrated from my birthplace. As you may know at the beginning of last century the Greek population of Constantinople was reaching the 500,000 inhabitants. The center of the Orthodox Church, the Ecumenical Patriarchate s headquarters are there since the fourth century A.D. The city has a great history, capital of the Byzantine Empire until 1453 and then capital of the Ottoman Empire until A commercial city with a long history. The Greek minority was very well established with their institutions, their schools, more than 100 churches and shrines, monasteries, different social and educational clubs and societies. For example: The Great School of the Greek Nation (E Meghalee Sholle tou Ghenous, the Lycieum of Zoghrafion, the shrine of the Life giving Fountain, the Commerce School in Halky, the unique in the Aegean at its time, the orphanage in Pringhepo island, the patriarchal theological School of Halky island, educational societies, music schools and conservatories and many more. Despite the severe persecutions and mandatory immigrations of the Greek population, called Romeaee, Romans from time to time in the last century, there was a respectable number of Greeks still living in Constantinople during the 1960s. The Constantinopolitan traditions for Christmas and New Year mainly comes from the Byzantine times. Despite the fact that today, in 2004, there are only 200 greek families left, these traditions are continuing. In the old times, the Christmas nights were usually covered with snow. Christmas Eve was a night of serenity and religious mysticism. People were getting ready by decorating Christmas trees, writing cards, and shopping. The day before Christmas the famous markets of Constantinople Balik Pazar in Pera (Beyoghlou) and the Egyptian Bazar in the Old City were very busy with the Greeks and other Christians who were living in Constantinople. The Greeks would mainly buy pastrami anatolian style, smoked fished called lakerda, soucouk, delicatessen, pork chops, chicken and other kinds of meat and vegetables for the Christmas day supper. The gypsies on the street would sell the gee with the red dried grapes, which was the main Christmas decorating plant called kokkena. The day before Christmas all the housewives were very busy in the kitchen preparing the Christmas meal. In the evening everybody was gathering home and almost everybody was fasting and getting ready to go to midnight Liturgy or early in the morning 5 a.m. to attend Christmas services and receive Holy Communion. At the Ecumenical Patriarchate in Phanar, the Patriarch celebrates the Liturgy with the Metropolitans of the Sacred Synod. The patriarch, on those years, would celebrate the Divine Liturgy with the members of the Holy Synod only seven times a year. On this Christmas Divine Liturgy the Patriarch wears the antique Sakkos a vestment that is adorned with a gold embroidered tree. On the top of the tree Christ is blessing and at the base of the tree Prophet Jesse is lying under the tree. On the branches, depicted are the icons of the prophets that are descendant of Christ. (This is where the tradition of the Christmas Tree comes from.) In the early Christmas morning hours the streets were filled with people who were coming out of the Church and going to their homes. The festive Christmas supper would start with a chicken soup. Later they had the famous constantinopolitan appetizers; especially the stuffed cabbage representing the baby Jesus wrapped in cloths in the manger. The main course was stuffed chicken or fried pork chops in wine sauce. The gifts were distributed not on Christmas Day but on New Year s day. Monetary gifts were given to the children who would kiss the hand of the grand parents and parents to ask forgiveness before going to receive Holy Communion. All the elderly had money under their hand when the children were kissing their hands. On Christmas day afternoon people would visit those who were celebrating their name days: Christos, Christine and the upcoming days, for Emmanuel, Stefanos and Stephanie. During these visits dinner was served and a joyful atmosphere was reigning. I just wanted to point out that on the Christmas tree, except the ornaments, candles were put on the edges of the branches while they were decorated with cotton. The Christmas cards were also stuck among the branches. The day before the New Year was the glorious day of the so called Vasselo Pitta the Cake of Saint Basil. The Orthodox Church on January 1st, celebrates the feast day of Saint Basil. It was the only time that the husbands and all men were entering the kitchen to help the housewife. Every family had a wooden rectangular container, which was coming out of the basement twice a year: once before Christmas and once before Easter. In this container the men of the house, sometime during the afternoon were kneading the dough for 4 5 hours. They would warm the room by putting wood in the stove and would cover the dough with blankets so it would rise during the night. In the morning they would make their Pitta and take it to the Baker of the neighborhood. All the Greek neighborhoods on New Years Eve were covered with the aroma of mastyha and mahlepee spices that were put in the cake. During the 12 days of Christmas they would send a Vasilopitta to their friends, relatives and neighbors. New Years eve was spent at home with family and friends. Thirty to forty people sit down dinners were taking place in many homes. Around 6 p.m. young people would go door to door singing carols for the New Year accompanied by accordion, mandolin and Tricantina. All the proceeds were given to the hospital, or to the education system, or even to a social or educational society. The preparation of the New Years eve dinner was a big one and it would start

11 The Voice of St George - Christmas 2004 Page 11 right after Christmas. The famous Constantinopolitan hot and cold appetizers (around 40 kinds) were put on the table. Feta cheese, hot kasery, French ham, chicken with walnuts, home made pickled cabbage, stuffed vine leaves, pastrami, fried liver, soucouk, lakerda and different other appetizers. The main course was stuffed turkey with rice, chestnuts, turkey s liver, pine nuts, small raisins and spices. Also, pork cooked with prunes and dry apricots and lamb with quince would compliment the meal. A lot of rice was used as a symbolism of wealth and blessings. The surrounding tables were decorated with freshly roasted mixed nuts and Chinese apple symbols of blessings and prosperity. In the homes of the people who were from Cappadocia, (Caramanleedes) people would throw rice on the corners of the houses for good luck. Others, would put their children in a large basket, that was used to transport pieces of wood for the stove, and would throw rice and dry nuts on them for good luck and prosperity during the New Year. Always, the Chinese apple and the empty bottle were next to the door. During that night, the drink that most people would consume was Ouzo or Raki.. Many good wishes, a lot of singing and talking accompanied the rich food. The specialty of the night, was the melon that was hanging from the ceiling since the summer, in order not to go sour, that was served during the fruit course. In those days, you could not find melons in the markets, out of season. After the meal, people would play lucky games for the good of the year. Cards, tombola like Bingo, and the sfouraky were common games during that time. Under the decorated Christmas tree, decorated baskets were placed filled with wrapped gifts. The baskets were Saint Basil s who was carrying them on his back. Everybody was waiting for the New Year in order to receive his or her gift from Saint Basil. In the houses where they had a lot of children invited, somebody among the visitors would dress like Santa and would show up in front of the door after midnight. The children would be very happy because of the visit from Santa. Five minutes before midnight, all the lights would be turned off and they would light with care, the candles of the Christmas tree. Also, they would let water run from all the faucets of the house, symbolizing the good, the prosperity and blessing. They would throw the empty bottle out of the door to the street so it would brake and to take with it all the bad luck. In the morning, the streets where the Greeks lived looked like they were made of crystal. The sanitary crew would sweep the pieces of bottles without complaining because they had a very good tip for the New Year from all the Greeks. On the doorstep, the Chinese Apple was thrown to the floor and its broken pieces and seeds would bring blessings and prosperity to the house. The Chinese apple was the family crest of the Byzantine Emperors. At midnight everybody would embrace each other and wish each other Happy New Year. In the meantime, other children in the streets would hit the empty garbage cans for the old year to leave and the New Year to come. Everywhere, we were able to hear the boats whistles who were at the harbor of Constantinople (Istanbul) and were also saluting the arrival of the New Year. The Greek homes would turn on the lights and all together they would sing the New Year s carol in Greek. Then the Vasilo pitta was brought to the room with 12 lit candles on it, each representing the 12 months. The head of the house was making a sign of the cross on the cake. The first piece was for Jesus Christ, the second for Saint Basil the third for the property, (each piece of property got its own slice) and then starting from the eldest all the way to the youngest, everybody would receive his or her slice. With agony, we looked to see who will have the gold coin and will be the luckiest person of the year. Later, more visits would take place, in order to do the podariko (first entrance) to a friends house or even their own. From there on, people would go to the shrines to light candles and take holy water to sprinkle their businesses and their homes so they could have a blessed year. The shrines were that of Virgin Mary in Vefa, the Staint Therapon in Gioulhane and one in the Bosphorous that I do not recall the name. In the later years, some people preferred to go dancing in the clubs. On the afternoon of the New Year s day we visited all the friends with the name Basil or Vasiliky or Sultana to celebrate their Name Days. After supper, the small children were put on a chair and would say poems and songs for the New Year while the adults applauded and admired. Άννα Καλογρίδη Στο χωριό μου, την Κάντανο, έχουμε πολλά έθιμα για τις ημέρες των Χριστουγέννων τα οποία ακόμα ακολουθούμε με την οικογένειά μου. Αρχίζει η σαρακοστή 15 Νοεμβρίου. Η μητέρα μου προσπαθούσε να νηστεύουμε όλη τη σαρακοστή, κι αν όχι όλη, οπωσδήποτε κάθε Τετάρτη και Παρασκευή. Σ αυτή τη νηστεία συνήθως επιτρεπόταν το ψάρι εκτός από Τετάρτη και Παρασκευή. Τη παραμονή των Χριστουγέννων τα αγόρια πηγαίναν στα κάλαντα και τους ανταμείβαν με λάδι, καρύδια ή και αμύγδαλα που στο τέλος τα μοιραζόταν. Τα κορίτσια βοηθούσαν τις μητέρες τους με το ζύμωμα του Χριστόψωμου και το ψωμί το φρέσκο γενικότερα. Οπωσδήποτε σφάζαμε το καθιερωμένο γουρουνόπουλο να ετοιμαστεί από νωρίς γιατί το βράδυ έπρεπε να πάμε εκκλησία. Χριστούγεννα ετοιμαζόταν το τραπέζι, καθόταν η οικογένεια, όλοι μαζί, λιβάνιζε η μητέρα πριν το φαγητό και όλοι μαζί κάναμε την προσευχή. Το απόγευμα πηγαίναμε να ευχηθούμε σε γιαγιάδες και παπούδες. Τη δεύτερη μέρα γιόρταζαν οι Μανώληδες και οι Μανωλίτσες (μάς έλεγαν ότι την ημέρα των Χριστουγέννων γιορτάζει μόνο ο Χριστός μας). Από γλυκά συνήθως εκτός από το Χριστόψωμο, ετοιμάζαμε μελομακάρονα και κουραμπιέδες. Πρωτοχρονιά Πρωί πρωί κάναμε λουκουμάδες για να μπει γλυκά ο χρόνος. Το ποδαρικό έκανε ένα μικρό παιδάκι που κρατούσε μια μεγάλη πέτρα (συμβολίζει την ευχή να μπει τόσος χρυσός στο σπίτι όσο μεγάλη είναι η πέτρα) και ένα κλαδί ελιάς (για να έχει ειρήνη ο χρόνος). Παραμονή Φωτών 5 Ιανουαρίου Η μητέρα μάς σήκωνε νωρίς γιατί θα περνούσε ο ιερέας να φωτίσει όπως μάς έλεγε (πήγαινε σε όλα τα σπίτια του χωριό). Νηστεία οπωσδήποτε γιατί την άλλη μέρα έπρεπε να πιούμε αγιασμό. 6 Ιανουαρίου όλοι στην εκκλησία για τον αγιασμό και μετά πάλι η οικογένεια για το γιορτινό τραπέζι όπου είχε διάφορα φαγητά όλα από κρέας και ποτέ δεν έλειπαν φυσικά τα Κρητικά (Σελινιώτικα) καλιτσούνια. Την ημέρα του Αγιασμού έπρεπε να πάμε να αγιάσουμε τα πάντα, ακόμα και τα μακρινά χωράφια που απέδιδαν καρπούς όπως αμπέλια και ελιές (το χωριό μου έχει το καλύτερο λάδι). Παραμονή Πρωτοχρονιάς Πάλι τα κάλαντα και φυσικά οι προετοιμασίες περιλάμβαναν το ψήσιμο της Βασιλόπιτας με το φλουρί μέσα. Το βράδυ συνήθως ανταμώναμε συγγενείς μέχρι την αλλαγή του χρόνου. Ερχόμενοι ξανά στο σπίτι μας, πρώτος έμπαινε ο πατέρας μέσα με την εικόνα του Χριστού και της Παναγίας. Το πρωί γινόταν λιβάνισμα, αγιασμός στο σπίτι, και το μεγαλύτερο αγόρι θα πήγαινε στους παπούδες και στις γιαγιάδες για ποδαρικό και ο πιο τυχερός θα έπαιρνε 5 10 δρχ., οι υπόλοιποι που πηγαίναμε αργότερα 1 2 δρχ. το πολύ. Οι γονείς μας μάς έδιναν από 2 5 δρχ. και εμείς χαρούμενα και ευτυχισμένα. Αν υπήρχαν εορταζόμενοι στο χωριό θα πηγαίναμε επίσκεψη.

13 The Voice of St George - Christmas 2004 Page 13 HOLIDAY TRADITIONS FROM CYPRUS By Mrs. Eleni Andronikou The weeks before Christmas are very busy ones, especially for the women. They clean the house, sew new clothes for the children and do a lot of baking during the last week, like melomakarona, kourambiedes, hristopsoma, gyristarkes like paximadia. In the old days in the village, the pig that had been reared that year would be slaughtered in the back yard a few days before Christmas. Everyone in the village is busy making loukanika sausages, lountza smoked filet, hiromeri smoked ham and zalatina brawn. Large earthenware jars are filled with fat in which the sausages are preserved. A few days before Christmas children go around caroling with their money pouch. On Christmas Eve the kalikantzari arrive and they stay until the Eve of Epiphany Day. These little creatures go around the village after midnight, scaring the women or stealing the sausages from the chimney and playing all sort of harmless jokes. If you meet one you can scare it off by making the sign of the cross or by showing it a black handled knife, or red thread. At the Eve of Epiphany all women get holy water from the church to bake the xerotygana and loukoumades. The priests go around with the agiasmo and are sprinkled from room to room to clean them from any evil spirit. At this day the women fry xerotygana and sausages of which the first plateful is thrown by the children on the rooftops for the farewell party of the kalikantzari. While they jump about singing Titsin titsin loukaniko maheri mavromaniko and so they leave this earth until the coming year. On Christmas Day, after church, people visit each other wishing hronia polla kai kala Christougenna. Of course they have the Christmas dinner with all kinds of mezedes and stuffed turkey or roast lamb or pork and many desserts. New Year s Day is considered a great holiday and Agios Vasilis is approximately the equivalent of St. Nick in the American tradition. Again the children carol in the streets, every door opens and the children are given coins and sweets for their caroling. On New Year s Eve lucky games are played. In the villages the young girls sit around the open fire and throw olive leaves in to the flames to see whether he loves her, he loves her not. If the leaves crackle, he does. Also on New Year s Eve, after dinner, they put the vasilopita on the table, a bottle of wine next to it and their wallet. This is to welcome St. Basil and bless their wallet to be always full of money. On New Year s Day after church the Vasilopita is cut. This is a very exciting moment especially for the children, because of the lucky coin inside the vasilopita. The head of the family cuts the vasilopita in the following manner: first crosswise, then a slice for Jesus Christ, one for St. Basil, one for the poor, one for the house, and then a slice for each of the members of the family starting with the youngest member. This is the only time that the guests come last. Whoever finds the coin is the lucky one for the coming year. The first beggar or poor person that comes to the house gets the slice that has been set aside for the poor. On Epiphany Day after the Divine Liturgy the priest says: Come receive the light at which all go and light their candles. This light is carried home and kept burning for forty days in front of the icons. It is for this reason that the holiday is also called Fota. Also on this day the children visit their godparents from whom they expect a monetary present. Kalimera kai ta Fota ke tin pouloustrena prota which means Good morning on this Epiphany Day and the money first. Best wishes for a Merry Christmas and a Happy New Year.

Πρωί πρωί όμάδες παιδιών, κρατώντας τα καθιερωμένα τρίγωνα και τις φυσαρμόνικες, γυρίζουν στα σπίτια και στα μαγαζιά και ψάλλουν το «Χριστός Γεννάται» και παίρνουν τον πατροπαράδοτο μποναμά. Η μπάντα της φιλαρμονικής του Αργοστολίου περιφέρεται στους κεντρικούς δρόμους της πόλεως ψάλλοντας το «Χριστός Γεννάται» συνοδευόμενο από άλλους εύθυμους ρυθμούς, δίδοντας έτσι εορταστική ατμόσφαιρα σ ολόκληρη την πόλη. Την νύχτα, παρέες μεγάλων με κιθάρες, βιολιά, μαντολίνα και τρίγωνα περιφέρονται στα φιλικά σπίτια ψάλλοντας και προσμένοντας και αυτοί γενναίο μποναμά. Το βράδυ της παραμονής των Χριστουγέννων γίνεται το «Βάφτισμα τση φωτιάς» ή το σπάσιμο τση κουλούρας. Όλη η οικογένεια μαζεύεται γύρω από τη φωτιά, η οποία ανάβεται με τρία ενωμένα κούτσουρα. Η μητέρα δίνει στον πατέρα μια φρεσκοψημένη κουλούρα, σφραγισμένη με την άγια σφράγιση, την οποιά ο πατέρας χαράζει ανάλογα με τα μέλη της οικογένειας. Κατόπιν, ενώ κρατουν όλοι την κουλούρα, ο πατέρας παίρνει λάδι και κρασί από την πρόσφατη εσοδεία τους και το ρίχνει από το γύρω της κουλούρας να πέσει σταυρωτά επάνω στη φωτιά. Εν συνεχεία, όλοι μαζί ψάλλον «Η Γέννησις σου Χριστέ» και ταυτοχρόνωνς τραγά ο κάθε ένας το κομμάτι του. Δεν παύει, όμως, στην Κεφαλονιά, όπως και στα περισσότερα μέρη της Ελλάδος, να υπάρχει η δεισιδαιμονία ότι, δηλαδή, τη νύχτα των Χριστουγέννων βγαίνουν τα Παγανά («Καλικάτζαροι»), τα οποία περιφέρονται μέχρι του Αγιασμού. Για το λόγο αυτό εκόμη και σε μερικά χωριά μέχρι σήμερα ανάβουν τη φωτιά του Δωδεκαήμερου, της οποίας η στάχτη πρέπει να παραμείνει μέχρι του Αγιασμού, και με ένα δαυλί αναμμένο κάνουν σταυρούς επάνε στις πόρτε και τα παράθυρα των σπιτιών για να μη μπουν μέσα σ αυτά τα Παγανά. Την ημέρα των Χριστουγέννων, είναι απαραίτητος στο τραπέζι ο κούρκος καθώς το Χριστόψωμο, το οποίο έχει ιδιόρρυθμο σχέδιο με το σχήμα του σταυρού στη μέση. Το πρωί των Χριστουγέννων η οικογένεια ετοιμάζεται για την εκκλησία. Είναι δε έθιμο να γίνεται την μέρα αυτή ο μποναμάς του δεξιού ψάλτη. Τα τελευταία χρόνια καθιερώθηκε και στην Κεφαλονιά το Χριστουγεννιάτικο δενδρο. CEPHALONIAN TRADITIONS By Mrs. Angeliki Hionis Christmas It s the day before Christmas, and groups of children are going around, holding and playing their triangles and accordions, and singing the Christmas carols. The band of Argostoli is making the rounds in the major streets, filling the entire city with sounds of merriment and joy. At night, groups of people with guitars, violins and mandolins also go around singing Christmas carols and receiving customary holiday gifts form the owners of the houses they visit. On the night before Christmas the celebration of the Holy Bread or the christening of the fire takes place. Mother has baked a loaf of bread that has been blessed and also has the holy symbols inscribed on it. Father takes the Holy bread and cuts it with out removing the pieces. The loaf is held over the house fire, which composed of three logs signifying the Holy Trinity and olive oil and wine that are from the latest harvest are poured around the Holy Bread making the sign of the cross. Singing Christmas carols then, each member of the family takes a piece of the blessed bread and eats it. It is a Cephalonian belief that on the night of Christmas the pagana or evil spirits come out and roam the country until Epiphany Day. These evil spirits can be kept away from the houses by lighting the fire of the twelve days which is blessed and by taking a lighted stick from it and making the sign of the cross on the doors and windows. The Christmas meal is usually turkey and the bread has the shape of the cross in the middle. ON Christmas Day it is traditional to give money at church to right chanter (psalti). Lately, the Christmas tree has also become traditional. New Year s Πρωτοχρονιά Από το πρωί της παραμονής αρχίζουν οι χαιρετούρες: «Καλή σου αποκοπή». Είναι, βλέπετε, η τελευταία ημέρα του χρόνου και όλοι εύχονται με το καλό να περάσει το παλιό και με το καλό να έλθει το νέο έτος. Οι χωρικοί πωλούν από το πρωί στις νοικοκυρές και τους μαγαζάτορες (καταστηματάρχες) αγιοβασιλίτσες. Βέβαια μπορεί να αναρωτιέστε τι να είναι αυτές, οι περιβόητες αγιοβασιλίτσες: δεν είναι τίποτε άλλο απο ασκινοκάρες (αγριοκρεμμύδες). Από ημέρες τώρα οι χωρικοί έχουν βγει στου λόγγους και έχουν ρημάξει τις ασκινοκάρες, ονειρευόμενοι τον μποναμά που πρόκειται να πάρουν από την κάθε νοικοκυρά. Δίνει η νοικοκυρά τον μποναμά και παίρνει την ασκινοκάρα, την οποία βάζει κοντα στα κονίσματα ευχόμενη να ρίξει In the morning of New Year s Eve the salutations begin, Happy ending. You see, it is the last day of the year and everybody wants to wish a good ending of the old year and a good beginning of the New Year. The villagers are selling Agiovasilitses or wild onions. For days now they have scoured the countryside collecting them and are dreaming of the money they will receive from each household they are going to sell them to. The wild onion is placed near the icons and if it bears leaves during the year, it will be a sign of happiness for the family throughout the year. The

Τα παιδιά, ομάδες ομάδες, περιφέρονται στα σπίτια και ψάλλουν τον Αϊ Βασίλη. Η μπάντα του Αργοστολίου περιφέρεται στους δρόμους της πρωτεύουσας του νησιού ψάλλοντας τα Κάλαντα και πηγαίνοντας από πόρτα σε πόρτα παίρνουν τον Αγιοβασιλιάτικο μποναμά. Το μεγάλο όμως ξεφάντωμα είναι το βράδυ, μόλις σουρουπώσει (βραδυάσει). Όλοι εγκαταλείπουν τα σπίτια τους και συγκεντρώνονται στον κεντρικότερο εμπορικό δρόμο του Αργοστολίου, το «Λιθόστρωτο». Εκεί αποχαιρετούν όλοι τον παληό χρόνο με ένα πρωτότυπο τρόπο: Σουλατσάροντας επάνω κάτω και οπλισμένοι με μικρούς ψεκαστήρες, τα δε τελευταία χρόνια με νερομπίστολα, εξακοντίζουν ο ένας στον άλλον κολώνιες. Τα τριζώνια και οι σφυρίχτρες δίνουν και παίρνουν και, στο τέλος, αποκαμωμένοι όλοι από το σουρτα φέρτα (βόλτες) και με κατακόκκινα μάτια από τις κολώνιες και μουσκεμένοι από το νερό, γιατί κατά φυσική συνέπεια όταν τελειώσουν οι κολώνιες καταφεύγουν στο νερό, επιστρέφουν στα σπίτια τους για να φάνε τους πατροπαράδοτους λουκουμάδες, τηγανίτες, οι οποίες είναι απαραίτητες την παραμονή της πρωτοχρονιάς. Εν συνεχεία το ρίχνουν στο παιχνίδι γιατι την πρωτοχρονιά παίζουν, μικροί και μεγάλοι, το πατροπαράδοτο τριαντα ένα που δίνει και παίρνει, καθώς και άλλα τυχερά παιχνίδια. Την ημέρα της πρωτοχρονιάς, μετά το φαγητό, ο πατέρας θα κόψει την βασιλόπιτα στην οποία εσυνηθίζετο να βάζουν μια λίρα, ενώ τα τελευταία χρόνια απλώς ένα κέρμα λόγω του ότι η λίρα έγινε πανάκριβη. Ο πατέρας θα κόψει την βασιλόπιτα σε τόσα τεμάχια όσα και τα μέλη της οικογένειας και ένα επί πλέον το οποίο θεωρείται του σπιτιού. Εκείνος στον οποίο θα τύχει το νόμισμα είναι ο τυχερός της χρονιάς. Θεοφάνεια ή Φώτα Στις 5 Ιανουαρίου, ξημερώματα του Αγιασμού, γίνεται νυχτερινή ακολουθία στις εκκλησίες. Την ημέρα, από ενωρίς το πρωί, οι παπάδες περιφέρονται από σπίτι σε σπίτι και μαγαζί σε μαγαζί της ενορίας τους με το πετραχήλι και ψάλλουν το «Εν Ιορδάνη βαπτιζομένου σου Κύριε». Τους ακολουθεί ένα παιδί το οποίο κρατά τον ορειχάλκινο σύκλο (κουβά) με τον αγιασμό. Ο παπάς αγιάζει τα σπίτια και τους ανθρώπους, ευλογεί, δωρίζεται από τους νοικοκυραίους και περιφέρεται όλη την ημέρα από σπίτι σε σπίτι. Η ημέρα αυτή είναι νηστήσιμη. Η επόμενη ημέρα είναι γιορτή μεγάλη. Των Φωτώνε! Τα πάντα είναι κλειστά, δηλαδή, καταστήματα, γραφεία, σχολεία. Ο κόσμος πηγαίνει στην εκκλησία, είναι δε και ημέρα του επίσημου μποναμά (φιλοδώρημα) του παπά. Όλοι οι ενορίτες παρευρίσκονται την ημέρα αυτή στην εκκλησία για τον μποναμά του παπά. Την ημέρα αυτή γίνεται ο αγιασμός των νερών. Οι παπάδες κάνουν δοξολογία και κατόπιν πετούν τον σταυρό στην θάλασσα. Παλαιότερα, οι νέοι βουτούσαν στην θάλασσα και έπιαναν τον σταυρό τον οποίον περιέφεραν στους δρόμους για να τον ασπαστεί ο κόσμος και να τους φιλοδωρίσει. Τα τελευταία, όμως, χρόνια δένουν τον σταυρό με κορδέλλα και έτσι πια ο παπάς ανασύρει τον σταυρό από την θάλασσα. Τα Φώτα εορτάζονται με την ίδια θρησκευτικότητα και μεγαλοπρέπεια που εορτάζονται και τα Χριστούγεννα. Πατροπαράδοτο φαγητό η γαλοπούλα και απαραίτητο ψωμί η Φωτίτσα. Τα μελομακάρουνα και οι κουραμπιέδες είναι απαραίτητες λιχουδιές σε κάθε σπίτι για το τραταμέντο (κέρασμα) τις άγιες αυτές ημέρες. children, in groups, are going around singing New Year s carols and collecting the traditional monetary gift or bonama. The greatest celebration, however, takes place on the commercial street of Lithostroto at dusk. The people of Argostoli are walking back and forth and spraying each other with cologne. Noise makers with whistles and triangles, singing and screaming can be heard all night. At last everybody exhausted form the incessant walking and wet with cologne or water go home to eat honey balls and play cards, a traditional way of welcoming the New Year. On New Year s Day, after the main meal, father will cut the Vasilopita, and everyone will be checking to see if this piece has the lucky coin, hidden inside the cake. Traditionally, the coin was a golden sovereign, but lately, due to its high cost, other coins have been substituted. The Epiphany On the fifth of January, the day before Epiphany, from early in the morning the priests of the island go from house to house blessing them and the people with Holy Water, which is carried by a child in a bucket. The priest receives monetary gifts ( bonama ), in appreciation of the blessing. At dusk a Holy Liturgy takes place which is attended by everybody. The Day of the Epiphany, Foton is a holiday celebrated throughout the country and it is the day of the blessing of the waters. After Holy Mass the priests throw the cross out and back to the priest, for which they receive a special blessing. All households bake the traditional melomakarouna and kourampiedes with which they treat visitors throughout the holidays.

Πρώτα που βγήκεν ο Χριστός -άγιος και πνευµατικός- στη γη να περπατήσειεβγήκε και χαιρέτησε όλους τους ζευγολάτες. Τον πρώτο που χαιρέτησε ήτον 'Αγιο Βασίλης -Καλώς τα κάνεις Βασιλειό, καλόν ζευγάριν έχεις. -Καλό το λες αφέντη µου καλό και ευλογηµένο,που το 'βλογά η χάρη σου µε το δεξιό σου χέρι,µε το δεξιό µε το ζερβό µε το µαλαµατένιο. -Για πες µου 'Αη Βασίλη µου πόσα µουζούρια σπέρνεις; -Σπέρνω σταράκι δώδεκα, κριθάρι δέκα πέντεταή και ρόβι δεκαοχτώ κι από νωρίς στο στάβλο. Εθέρισα κι αλώνεψα κι έκαµα χίλια µόδιακαι τα κορκοσκινίσµατα χίλια και πεντακόσια. Ματ' άλλα δεν εµέτρησα γιατί Χριστός επέρνα.και κεια που στάθην' ο Χριστός χρυσόν δεντρίν εβγήκεν,και κεια που µεταπάτησε χρυσό κυπαρισσάκιπού 'χε στην µέση τον σταυρό και στην κορφή την βρύση. Στα µεσοκλωναράκια του πέρδικα κακαρίζει. -Κακάριζε κακάριζε πέρδικα κορωνάτη,µα επά τον έχουν τον υγιό, το µοσχοκανακάρη..." ΚΑΛΑΝΤΑ ΘΡΑΚΗΣ Χριστός γεννιέται, χαρά στον κόσµο, χαρά στον κόσµο, στα παλληκάρια. Σαράντα µέρες, σαράντα νύχτες,η Παναγιά µας κοιλοπονούσε. Κοιλοπονούσε, παρακαλούσε,τους αρχαγγέλους, τους ιεράρχες. Σεις αρχαγγέλοι και ιεράρχες, στη Σµύρνη πηγαίν τε, µαµµές να φέρ τε.αγια Μαρίνα, άγια Κατερίνα, στη Σµύρνη πάνε,µαµµές να φέρουν.όσο να πάνε κι όσο να έρθουν, η Παναγιά µας ηληυτηρώθη. Στην κούνια τό βαλαν και το κουνούσαν,και το κουνούσαν, το τραγουδούσαν. Σαν ήλιος λάµπει,σα νιο φεγγάρι,σα νιο φεγγάρι, το παλληκάρι.φέγγει σε τούτον το νοικοκύρη,µε τα καλά του, µε τα παιδιά του, µε την καλή τη νοικοκυρά του... ΠΑΡΑ ΟΣΙΑΚΑ ΚΑΛΑΝΤΑ ΑΠΟ ΤΗΝ ΙΚΑΡΙΑ Αρχιµηνιά κι αρχιχρονιά, ψηλή µου δεντρολιβανιά κι αρχή καλός µας χρόνος, εκκλησιά µε τ άγιος θρόνος. Άγιος Βασίλης έρχεται από τον κάβο* Πάπα, βαστάει και στην πλάτη του µια µαλλιαρή θυλάκα*, να βάλει µέσα τα ψωµιά, τις τηγανίτες, τα λεφτά. -Εσένα, αφέντη, πρέπει σου καρέκλα καρυδένια, για ν ακουµπάς τη µέση σου τη µαργαριταρένια. - -Και πάλι ξαναπρέπει σου, βάλε στραβά το φέσι* σου και δίπλα το βρακί* σου για να σκάσουν οι εχθροί σου. - -Πολλά παµε τ αφέντη µας ας πούµε της κυράς µας. - -Κυρά ψηλή, κυρά λιγνή, κυρά ταπανοφρύδα* που έχεις τον ήλιο πρόσωπο και το φεγγάρι στήθος, και του κοράκου τα φτερά τά χεις ταπανοφρύδια* που όταν λουστείς και χτενιστείς και πας στην εκκλησιά σου η στράτα* ρόδα γέµισε απ την περπατησιά σου. -Πολλά παµε και της κυράς, ας πούµε και της κόρης. -Έχεις και κόρην όµορφη,που δεν έχει ιστορία, ούτε στην Πόλη βρίσκεται, ούτε στη Βενετία. -Έχεις και κόρη όµορφη, βάλ τηνε στο ζεµπίλι* και κρέµασέ τηνε ψηλά, να µη τη φάν οι ψύλλοι. - -Πολλά παµε, πολλά παµε, µα δε µας εκεράσατε, κι αν ακόµα θε να πούµε, βάλτε µας κρασί να πιούµε. - -Εφάγαµε τον πετεινό, να φάµε και την κότα και δώστε µας το φλουράκι* µας, να πάµε σ άλλη πόρτα! κάβος = ακρωτήριο θυλάκα= µεγάλη σακούλα φέσι = είδος καπέλου ή σκούφου που φορούσαν την εποχή της Τουρκοκρατίας. βρακί = είδος ρούχου, κάτι σαν παντελόνι, που φορούσαν οι χωρικοί τα χρόνια της Τουρκοκρατίας. ταπανοφρύδα = γυναίκα µε ωραία φρύδια (µεγάλα πυκνά κα µαύρα φρύδια). ταπανοφρύδια = µεγάλα,πυκνά και µαύρα φρύδια. στράτα = ο δρόµος ζεµπίλι = ψάθινος σάκος, το δίχτυ για τα ψώνια. φλουράκι = µικρό Μωραΐτικα κάλαντα Χριστουγέννων Χριστούγεννα, Πρωτούγεννα, πρώτη γιορτή του χρόνου, για βγάτε, δέτε, µάθετε, πως ο Χριστός γεννάται. Γεννάται κι αναθρέφεται µε µέλι και µε γάλα, το µέλι τρων οι άρχοντες, το γάλα οι αφεντάδες και το µελισσοβότανο να νίβοντ' οι κυράδες! Κυρά ψηλή,κυρά λιγνή, κυρά γαϊτανοφρύδα, κυρά µου οτάν στολίζεσαι να πας στην εκκλησιά σου, βάνεις τον ήλιο πρόσωπο και το φεγγάρι αγκάλη και τον καθάριο αυγερινό τον βάζεις δακτυλίδι. Εµείς εδώ δεν ήρθαµε να φάµε και να πιούµε, παρά σας αγαπούσαµε κι ηρθαµε να σας δούµε! ώστε µας και τον κόκκορα, δώστε µας και την κότα! ώστε µας και πέντ' έξι αυγά, να πάµε σ άλλη πόρτα!

Και ο Ηρώδης ταραχθείς έγινε θηριώδης. ΧΟΡΩ ΙΑ: Και ο Ηρώδης ταραχθείς έγινε θηριώδης. Κράζει τους µάγους και ρωτά: -Μαγοί πού θε να πάτε ΧΟΡΩ ΙΑ: Κράζει τους µάγους και ρωτά: -Μαγοί πού θε να πάτε; Στης Βηθλεέµ το σπήλαιο την πόλη την Αγία. ΧΟΡΩ ΙΑ:της Βηθλεέµ το σπήλαιο την πόλη την Αγία. Π' εκεί γεννάει το Χριστό η έσποινα Μαρία. ΧΟΡΩ ΙΑ: Π εκεί γεννάει το Χριστό η έσποινα Μαρία. 2) Αρχιµηνιά κι αρχιχρονιά, πρώτη του Γεναρίου. Το καλαµάρι έγραφε και το χαρτί µιλούσε! - Βασίλη πόθεν έρχεσαι και πόθε κατεβαίνεις; - Από τη µάνα µ έρχοµαι και στο σχολειό πηγαίνω, να µάθω τ άγια γράµµατα και τ άγιο Ευαγγέλιο! Σ αυτήν την πόρτα που ρθαµε, πέτρα να µη ραγίσει, κι ο νοικοκύρης του σπιτιού,χρόνια πολλά να ζήσει! Να ζήσει χρόνους εκατό και να τους απεράσει, και στων παιδιών του τις χαρές κουφέτα να µοιράσει! Κυρά χρυσή, κυρ αργυρή, κυρά µαλαµατένια, που σε χτενίζουν άγγελοι µε τα χρυσά τους χτένια, άνοιξε το πουγκάκι σου το µαργαριταρένιο, και δώσε µ ένα τάλληρο, ας είναι κι ασηµένιο! Και τώρα καληνύχτα σας, καλό ξηµέρωµά σας, κι ο Άγιος Βασίλειος να 'ναί βοήθειά σας! ΚΕΦΑΛΛΟΝΙΤΙΚΑ ΚΑΛΑΝΤΑ ΠΡΩΤΟΧΡΟΝΙΑΣ Άγιος Βασίλης έρχεται Γενάρης ξηµερώνει! Σαν τα µυρµήγκια περπατούν, σαν τα µελίσσια πάνε, µε τη φλογέρα τα λαλούν, µε τ ν αντρειά τα διώχνουν. Χρόνια πολλά, καλή χρονιά στο σπίτι σας. ΚΑΛΑΝΤΑ ΝΗΣΙΩΝ ΤΟΥ ΑΙΓΑΙΟΥ Κάτω στα Ιεροσόλυµα, στηηης Βη- στης Βηθλεέµ την πόολη, εκεί δεντρί δεν ήτανε, δεεεντρί- δεντρί ξεφανερώωθη. Κι ανάµεσα στους κλώνους του, αααγγέ- αγγέλοι κι αρχαγγέελοι κι ο Μιχαήλ Αρχάγγελος ξεεεφτε- ξεφτερουγά και λέεει : -Χριστέ, για δώσ µου τα κλειδιά καιαιαι τα- και τα χρυσά κλειδάακια ν' ανοίξω τον παράδεισο, νααα µπω- να µπω σε περιβόολι, να κόψω µήλο δροσερό, νααα πιω- να πιω νερό δροσάατο, να γείρω ν' αποκοιµηθώ σεεε νε- σε νεραντζιά 'πο κάατω. Και σας καληνυχτίζουµε, πεεεσέ- πεσέτε κοιµηθείειτε, ολίγον ύπνον πάρετε κι εεευθύς- κι ευθύς ως σηκωθείειτε, στην εκκλησία τρέξετε όοολοι- όλοι µε προθυµίιαν και του Χριστού να ακούσετε τηηη θεί- τη θεία λειτουργία.

18 Page 18 The Voice of St George - Christmas 2004 HOLIDAY RECIPES Pork with Plums Ingredients approx 600gr (about 3 lbs) tenderloin pork. 150gr (1 cup) prunes pitted 2 Tbsps peeled, unsalted pistachio nuts 3-4 tsps olive oil a little finely chopped parsley 1/2 cup dry white wine salt, pepper Using a knife blade, open the outside of the pork, salt and pepper it inside and out and stuff it with the prunes, finely chopped if you desire, the pistachios, and the parsley. Tie it with kitchen string and saute in the olive oil. Add the wine and let it simmer for about 20 minutes on medium heat. Remove the meat. Add a little olive oil to the sauce, and mix in thoroughly. Serve with Basmati rice or couscous, with orange zest. Boureki from Chania (Traditional Cretan Recipe) Ingredients For the pastry: I lb all purpose flour 3 tsp oil ½ tsp salt 1 glass red wine 1 glass warm water For the filling: 3 lbs thinly sliced potatoes 3 lbs thinly sliced zucchini 2 medium sized, thinly sliced tomatoes 1 bunch finely chopped mint 1 cup all purpose flour 2 lbs mizithra (hard, salty cheese, similar to romano) 2 cups grated cheese (use gruyere or something similar) salt pepper 1 cup oil 1 glass milk 2 eggs 2 Tbsps heavy cream 4 tsps sesame seeds Prepare the pastry: rub together the water, oil, salt, wine and flour and knead well. Cover the dough and let it sit for approximately 30 minutes. Divide the dough in half and roll out two sheets of medium-thick pastry. Lay one sheet in a large, greased tin. Put the potatoes, zucchini, tomatoes and mizithra in layers in the tin. On each layer, sprinkle a little salt and pepper, mint, flour and grated cheese. Beat the eggs with the milk and the cream and pour over the top. Pour the oil over the boureki. Place the second sheet of pastry over the top, brush with oil and sprinkle with sesame seeds. Cut the boureki into squares and bake for 1-1 ¼ hours in a medium preheated oven. Vasilopitta Ingredients: 1 cup butter 1/2 cup margarine 3 cups of sugar 9 eggs 3 cups orange juice 2 1/2 tsps baking powder 2 lbs all purpose flour Orange zest 2 tsps of vanilla 1/2 cup powder sugar Whisk together the butter, margarine, sugar, egg yolks, baking powder, flour, vanilla, orange juice and zest. After whisking for some time, whisk up the egg whites separately till

19 The Voice of St George - Christmas 2004 Page 19 they form snowy peaks, as for a meringue. Then fold the egg whites in with the rest of the mixture gently. Place a coin into the mixture, having first wrapped it up in aluminium foil. Butter a medium sized round pan, and pour the mixture in. Bake for 45 minutes at 180 C. Remove from the oven and leave to cool, before carefully removing from the pan. Sprinkle the powder sugar all over the surface of the cake and decorate with Christmas decorations. Good luck! Kourabies From Kimi Ingredients: 1 lb butter or margarine 1 cup powder sugar 1 small glass ouzo 1 egg 2 tsps vanilla whitened and roasted chopped almonds all-purpose flour Beat the butter until it becomes white and fluffy. Add the sugar and one by one add the egg, the vanilla, the ouzo, the almonds and the flour. Mix well. Shape the mixture into wide, not too thick rectangles. Use a glass to cut into crescent shapes. Bake in a preheated oven ( C) for about 20 minutes. While still hot, sprinkle with ouzo and roll in the sugar. Melomakarona From Crete Ingredients: Melomakarona: 3 cups of good quality olive oil 1 cup orange juice 1 shot glass brandy 1 tsp ground cloves 1 cup of alysiva*, 1 cup water, in which you have boiled 3-4 sticks of cinnamon 1 tsp powdered cinnamon 1/2 cup sugar zest and juice of one lemon 2 lbs all purpose flour 2 lbs hard flour You may need to add a little more flour Syrup: 2 cups sugar 3 cups water 4 tsps honey, to be added after boiling the syrup (to sprinkle) sesame seeds, ½ tablespoon cinnamon, ½ tablespoon cloves, 4 tablespoons sugar. * Boil two cups of water, add two spoonfuls of ash (from good quality wood, either olive or pine). Let it boil for 2 or 3 minutes and then leave to cool. Then strain it using cotton wool, so that the liquid you collect is clear. In a large bowl, beat the sugar with the oil, then add the liquid ingredients in order, with the exception of the lemon juice. Add the lemon zest, the cloves and the cinnamon (if you wish, add zest of one orange). Add the flour, then the lemon juice and knead well. The mixture should not stick to the hands when ready. Leave the mixture to stand for at least half an hour, and then shape into small, roughly oval pieces. Press the melomakarona against a lemon zester to make markings on their surface. Bake the melomacarona at C for about 20 minutes, taking care not to burn. Leave to cool, then dip in the syrup. Make sure that they are cold first, and that the syrup is nice and hot. After this, mix together the sesame, cinnamon, cloves and sugar and sprinkle over the melomakarona. Leave to cool on trays overnight. An alternative to sesame seeds is using finely chopped walnuts.
