Wines The history of winemaking in Cyprus is very old, one of the oldest in the world. Recent excavations by Italian archaeologists have revealed the sensational truth that in this small island the production of wine dates back some 6000 years. There is an abundance of archaeological findings which provide ample evidence that viticultural activities in Cyprus date back to the depths of time. There are unique ancient mosaics portraying god Dionysus (Bacchus), very old wine-presses at the villages of Omodos, Lania and elsewhere and amphorae and other wine- related pots crowding the island's archaeological museums. They are all tangible proof of Cyprus' viticultural history through the centuries, testaments of an awe-inspiring heritage in winemaking. The local grape varieties Mavro, Xinistery, Ofthalomo and Maratheftiko are mixed with European varieties - Cabernet Sauvignon, Shiraz and Mataro among the reds and the whites Chardonnay, Sauvignon Blanc and Semillon resulting in wines that are softer richer and more complex. Info LET S TALK ABOUT FOOD AND DRINK HALLOUMI Halloumi is an unripe, semi hard white cheese with a texture between cottage cheese and mozzarella. Halloumi may well be eated raw but it tastes best when cooked, fried or on charcoal. It is this distinctive characteristic that makes halloumi a unique cheese. In fact, it claims to be the only commercially known cheese that can be cooked in a number of ways and retain its shape. Though the cheese keeps its shape, its outward appearance turns into a crispy golden brown color taking on the grill marks while inwards it softens significantly but it does not melt. SPOON SWEETS Spoon sweets are made with simple, natural ingredients, mainly fruit and sugar with a touch of lemon juice added to preserve the fruit s original color, as the citric acid prevents oxidation. They are made by slowly and gently boiling fruit in water and sugar over several hours or days, until the syrup sets. The making of each sweet has its own technique and follows specific rules of preparation and execution. A wellmade spoon sweet should retain the original shpe, color, aroma and taste of the fruit. ZIVANIA Zivania is a traditional alcoholic beverage, which has been produces fro centuries in Cyprus by distillation and has played an important role in the everyday life of Cypriots. Zivania is a strong drink, high in alcoholic content which according to tradition it is a distillate produced only from grapes. Zivania is characterized by its typical taste and aroma. It is colorless and it has a pleasant alocoholic content with light aroma of raisins. The typical alcohol content is 45% by volume. It is pure drink that contains no sugars and has no acidity. COMMANDARIA Taste Commandaria, just for once and you could become a passionate and romantic lover of this great wine. Each wine drop traps in it a multitude of flavors and aromas, enough to cover the full spectrum of human senses. Its color is warm, golden to ruby, its aroma is complex and passionate, its taste is sweet, its aftertaste is everlasting. Commandaria is a dessert wine and it should be used as such. It plays a final role in the course of a meal, writing the epilogue, so to speak and culminating in a perfect gustatory crescendo. SHEFTALIA Sheftalia is traditional Cypriot food. It is a type of crepinette, a sausage without skin that uses caul fat, or omentum, the membrane that surrounds he stomach of pig to wrap the ingredients rather than sausage casing. Caul fat is transparent and naturally fatty. The filling is made of ground pork mixed with finely chopped onion and parsley, salt and pepper and formed into small round balls. These balls are then placed on the spread caul fat and squares of caul fat are cut around them and wrapped, making little sausages which are put on two skewers.
