Prokeimenon. Mode 4. Psalm 67.35,26 God is wonderful among his saints. Verse: Bless God in the congregations. St. Paul's Letter to the Hebrews 11:33-40; 12:1-2 BRETHREN, all the saints through faith conquered kingdoms, enforced justice, received promises, stopped the mouths of lions, quenched raging fire, escaped the edge of the sword, won strength out of weakness, became mighty in war, put foreign armies to flight. Women received their dead by resurrection. Some were tortured, refusing to accept release, that they might rise again to a better life. Others suffered mocking and scourging, and even chains and imprisonment. They were stoned, they were sawn in two, they were tempted, they were killed with the sword; they went about in skins of sheep and goats, destitute, afflicted, illtreated - of whom the world was not worthy - wandering over deserts and mountains and in dens and caves of the earth. And all these, though well attested by their faith, did not receive what was promised, since God had foreseen something better for us, that apart from us they should not be made perfect. Therefore, since we are surrounded by so great a cloud of witnesses, let us also lay aside every weight, and sin which clings so closely, and let us run with perseverance the race that is set before us, looking to Jesus the pioneer and perfection of our faith. 18 3

HOSPITAL VISITS Salem Hospital is making a change in order to be in compliance with new privacy laws. This change will mean that we will no longer receive the list of Orthodox patients in the hospital. So, if you or a loved one will be in the hospital please call the church office so that we can pay you a pastoral visit. This change will also affect Beverly Hospital as well. SPLIT PEA PUREE (FAVA) 1lb green or yellow split peas 1/2 cup oil 1 small onion, grated 3 tablespoons finely chopped dill -Wash the split peas and cover them with water in a heavy saucepan -Boil them for10 minutes. Drain them in a colander and rinse them with hot water. -Return them to the washed sauce pan, cover them with 5 cups of hot water. and -Boil them for about 30 minutes over medium heat stirring occasionally until the peas disintegrate. -In the mean time saute the onion in the oil and add it to the boiling peas. -Remove from the heat and stir the peas rapidly with a wooden spoon until a light puree is obtained. -Empty the puree in a platter and top it with caramelized onions and chopped dill -When it is cold you can cut it into diamond pieces CARAMELIZED ONION 1 large onion chopped 3 tablespoons oil 1 tablespoon sugar 1/4 cup water or broth -In skillet combine combine the oil,sugar and liquid. -Cook and stir till blended. -Add onion and cook for about 10 minutes over low heat,stirring often. -The onion should be cooked and lightly browned. SEA FOOD CAKES For this recipe you can use canned crab, tuna, salmon or left over baked fish. 12 oz. sea food 1 small onion grated 2 tablespoons oil 1 cup bread crumbs and 1 more cup to shape the patties 2 teaspoons Worstershire Sauce 1 teaspoon prepared mustard -Saute the onion in the oil -Mix the bread crumbs, Wors. sauce, mustard, sea food and the onion with the oil. -If the mixture seems very soft leave it in the refrigerator for an hour or so. -Take 1/3 cup of the mixture at a time and shape it into patties. -Coat them with the bread crumbs -Fry them in oil 3 minutes per side -Move the fried patties into 300 degrees hot oven -Serve them with one of the last week's sauces and lemon slices. CABBAGE RICE 3 cups chopped cabbage 3 tablespoons tomato paste 1/4 cup oil 1 1/2 teaspoon salt 1/4 teaspoon pepper OR 1/2 teaspoon red pepper flakes, optional 1 cup long grain rice 2 cups water 2 teaspoons chopped parsley -Saute the cabbage and the seasonings in the oil for 20 minutes over low heat -Add water and tomato sauce and bring it to a boil -Add rice, reduce heat,cover and simmer until rice is done, about 20 minutes. 8 13
