Vlassides Tsiakkas M EN U THE OLD NEW CITY OF LIMASSOL Vlassides Shiraz 22.00 The grape variety Shiraz shows its distinctive character in this bottle of wine. The intense varietal aroma of blackberry complexes well with the vanilla given by the oak barrel. Full-bodied and yet velvety in flavor, Shiraz reveals its aging in new French oak barrels. Argyrides Chardonnay 24.00 Bright yellow-green colour. Rich nose characteristic of Chardonnay fruit combined with a little vanilla and very lightly roasted oak. A fine wine with body, balanced acidity and long lingering finish. Argyrides Vlassides Sauvignon Blanc 22.00 A wine produced solely from the private vineyards of Domaine Vlassides in Kilani. It has a vibrant nose with complex aromas and fruity mouth with refreshing acidity. Argyrides Mourvede 27.00 Single vineyard, great aroma and taste with chocolate and berries on the nose and palette. The Medieval Square that once upon a time was a regal attraction with the wedding of Richard the Lion Heart to Berengaria of Navarro in 1191 and a fortress over many decades, became a poor, run down area. It started with the development that came about from the brilliant vision of the Lanitis family that made an investment twelve years ago into the old Carob Mill. The Carob Mill used to be an old warehouse that processed and exported Carobs, also known as black gold that was a huge importance to Cyprus s economy. The old spirit and character of Limassol has once again been reborn, with many little cobbled streets running off the main square like arteries from the heart, providing a flow of life that is being enjoyed by locals and visitors alike. The one tradition that remains a great trait of the Cypriot way of life is the simple gathering of lots of people in a public area that have come to eat, drink, observe and greet one another. Like the tradition of the village square, the natural outdoors brings people together, to enjoy, to reminisce and to cultivate. With the New Marina getting readied to open next year, the old city is promising to be the hot spot of Cyprus and an attraction that proves that the foundations of our history is forever eternal. Wine has been with us since the dawn of civilization, some 7000 years and has followed the progress of human and agriculture development with a more scientific advancement over the last 90 years providing us with a more reliable and available pleasure. THE PROCESS OF MAKING WINE After the harvest, the grapes are taken into a winery and prepared for primary ferment. At this stage red wine making diverges from white wine making. Red wine is made from the must (pulp) of red or black grapes and fermentation occurs together with the grape skins, which give the wine its color. White wine is made by fermenting juice which is made by pressing crushed grapes to extract a juice; the skins are removed and play no further role. Occasionally white wine is made from red grapes; this is done by extracting their juice with minimal contact with the grapes skins. Rosé wines are either made from red grapes where the juice is allowed to stay in contact with the dark skins long enough to pick up a pinkish color. To start primary fermentation yeast may be added to the must for red wine or may occur naturally as ambient yeast on the grapes or in the air. During this fermentation, which often takes between one and two weeks, the yeast converts most of the sugars in the grape juice into ethanol (alcohol). There is a secondary process decreases the acid in the wine and softens the taste of the wine. Red wine is sometimes transferred to oak barrels to mature for a period of weeks or months; this practice imparts oak aromas to the wine. The wine must be settled or clarified and adjustments made prior to filtration and bottling. Mr Costas Tsiakkas establised the winery in 1988 which he is running together with his wife Mrs Maria Tsiakkas. It owns 5 hectares of vineyards which are located at an altitude of 1000-1400m. The winery produces around ten wines and has a capacity of 170 000 bottles annually. Vasa Winery is a family-owned traditional estate situated in the village of Vasa Koilaniou, on the slopes of the Troodos mountains, 25km from Lemesos. The 200 year old winery has been home to four generations of traditional winemaking and is run by the Argyrides family. The building also houses a wine museum. Vlassides Winery is α family-owned winery with a tradition of excellence in red wine. They produce high quality wines from grape varieties Shiraz, Cabernet Sauvignon, Cabernet Franc, and Merlot. Τhe wines are produced from their own vineyards, in the area around Kilani village, south of Troodos, at an altitude of 700 1,100 meters. We re both trained graphic designers/illustrators and UNDUN began as a part time marketstall project soon after we met in 2010. We worked at night and weekends from our small flat, and our ideas developed and grew until we were soon spending more and more time in our home studio and at markets. Two years later, we opened our corner shop in the old centre of Limassol, adding more vintage stock to our upcycled stuff. Old ideas like hardened crochet bowls, cyprus coffee cups with long necks and funky coloured aphrodite souvenir statuettes are some to name. Here at Ousia we are presenting more recent work, Cypriot coin jewellery. We see this both as reminiscing our old currency or even better economic times, as well as a means of recycling a frogotten item which many of us have left in a drawer in our house somewhere!
