FROM THE PRESIDENT/FOUNDER As this is the last edition of the e-newsletter for 2006 I would like to take the opportunity to thank our founding editor of this FFTN newsletter Maria Zissimos who is moving on. Maria s dedication and professionalism has been outstanding. We wish Maria every success in her new ventures as she rebuilds her career after been at home raising baby Nektaria and hope that she will come back and make a contribution in the future. Eugenia Pavlopoulou will take the role of editor in 2007. Furthermore, I would also like to thank Dr Vitkos for his contribution to the Philosophy Café. His passion and knowledge have been appreciated by the many followers and he is sadly missed. Dr Vitkos has also moved on to spend more time with his family especially the five grandchildren. We are looking for someone else who can help with the philosophy café classes in 2007 and beyond. Therefore if you have a passion and qualifications in Philosophy and you are interested to share your knowledge with other passionate philosophy lovers we would like to hear from you. Last but not least I would like to thank all committee members and all of you for your encouragement, contributions and membership and urge you to renew your membership if you haven t already done so. The Food For Thought is a not for profit Network. We are all volunteers and welcome other passionate volunteers who are interested to give back to the community. Please don t hesitate to speak to anyone on the Committee if you have any ideas and are willing to get involved. We hope that the stimulation we have provided through the Food for Thought Network newsletter, the networking forums and the philosophy café, have helped you improve your personal, family and professional life. FROM THE EDITOR Welcome to the December issue of the FFTN newsletter and the fourth issue for 2006. We hope that you have enjoyed the journey with us so far and in particular the personal and inspiring stories that our readers have shared with us over the year. As this issue is of a general nature, we have a wonderful mix of articles, from the culinary to the poetic. If you would like some cooking ideas for the festive season ahead then pages 4-5 will make you feel like you have never left your mother s kitchen. If you missed out on the last FFTN function for the year (November 17) go to page 10, where Eva Alfris has recapped the night. A big thank you to Anthea Sidiropoulos who has shared with us a touching song that will leave you in tears (page 7) and to Effie Nikoly for her inspirational poem about dealing with life s crossroads (see page 8). If you would like to get to know some of the FFTN committee better then go to page 6 for an interesting read. You never know what you have in common! As this year comes to a close I would like to take the opportunity to thank all of you who take the time to read this newsletter and share in its spirit. I would also like to thank all of our contributors who have shared their personal journeys and wisdom with us all. On a final note I would especially like to thank Varvara for giving me the opportunity to begin the journey of this newsletter, which commenced while I was half way through my maternity leave with my baby girl Nektaria; she is now 20 months old and a very energetic and enthusiastic toddler. I have enjoyed volunteering for the Food for Thought Network in my role as editor/contributor over the past year and have met many wonderful people that I would not have met otherwise. RECIPES FROM THE HEARTLAND - By Varvara Ioannou For a very long time I have been preoccupied with the thought of wanting to create a recipe book with a difference, incorporating not only recipes from many people but stories of those who inspired the recipe, why they are so special and how these old recipes of seasonal cooking have come back into our lives. Given the current obesity epidemic, the magic of the Mediterranean diet is pertinent to good health and back in-vogue. This idea has been shared with some of my close friends who are also interested in food and/or cooking and we hope to collect many recipes and stories and publish them one day. This idea was also raised by Maria Zissimos, our editor, who shares a love for food and cooking and proposed the idea of creating a cookbook encompassing food, culture and nutrition. We at Food For Thought think that this would be a great way to engage our mothers, grandmothers and aunties and the first generation women in our network and hence bridge the inter-generational gap as well as document their mouthwatering recipes. I would like to share with you two recipes; one from my mother and one of my mother-in-law who passed away recently on the same day as my mother 13 years ago. These two very different women have influenced me in different ways and I owe much for my love for food and cooking to both of them. In loving memory of my mother Stamatia. My mother, a village lady born in Epeiros, used home grown organic seasonal produce for her cooking. I grew up eating artichokes, broad beans, home grown tomatoes, zucchini, eggplant, cucumber, lentils, potatoes, spanakopites, tyropites, kolokythopites, kotopites and fresh home made organic bread and koulourakia. She always made bread in a wood fire oven. As the first born, my mother was very keen to pass on to me the art of cooking. She taught me from a very early age to make phyllo pastry for the spanakopites, tyropites and kolokythopites. Tradition has it that in the olden days in Epeiros the new bride had to make pita the second day after the wedding for the mother-in-law so she could be accepted and thought off as a great Nykokoira. When I was younger I used to think that this is a waste of my time especially when you can now buy the ready made phyllo in the supermarket. Of course when she was alive I did not have to worry about making it myself. Without asking, she would always make extra pites for all of us. As the years have gone by and the priorities in life have changed, I now take great pride in making my own phyllo pastry. I too have passed on the art of this to my daughter and it is something that we share together on Sundays. Kyria Stamatia s Spanakopita Mum never followed a recipe making pites was of second nature to her. Ingredients: For the pastry 4 cups of organic flour 1 tsp salt 4 tablespoons olive oil 1 cup of lukewarm water Mix all ingredients and make an elastic dough which can be kneaded into four phyllo pastries using a thin rolling pin. If the consistency is not right you need to add more flour or water. Let it sit for a few minutes covered with a tea towel. Tip: Use corn flour to knead the phyllo. It makes four sheets. Place two on a greased tray (tapsi) having spread olive oil in between them to avoid sticking together Ingredients: For the mixture 1 bunch of spinach, 1 bunch of dill 1 bunch mint and other herbs (mum used to collect a variety of fresh herbs she had grown in the garden) 1 leek 600 gm of feta (it must be hard) 4-6 eggs 1 tbs of pepper Chop everything fine and squeeze out all the liquid. Mix cheese and eggs and fold together. Place mixture in the middle of the tapsi covering it with the other two phyllo pastries. Tip: Add ½ a cup of rice and mix it well, so that the spanakopita does not become soggy Bake in the oven for approximately 1 hour 180 0 C. Page 4 4

RECIPES FROM THE HEARTLAND (Cont ) In loving memory of my mother-in-law On the other hand my mother-in-law grew up in a city. She worked, unlike many other Greek women of her generation and was a cook for some renowned Athenian families. She was a proud woman. No one else was a better nykokoira and cook than her. When she cooked she just sat there and observed. She was not doing five other things simultaneously like many of us do. One thing that I learnt from both of my mothers was to start my day by cooking a meal for the family and then do the other chores. This is something that I practise on weekends and find that it works well, as by the time the elaborate Greek dish is ready, I have done all the other chores in the house and ready to enjoy this traditional nutritional meal. Kyria Areti was a remarkable woman for her generation. She lived till 95 and right up until a few years ago she would climb onto chairs and tables to clean windows. She cooked all meals herself till a year ago. Whatever she cooked was delicious! She passed these skills on to her three sons who are also great cooks. Ingredients: For the syrup 2 glasses of water 2 glasses of sugar 2 pks of vanilla sugar Place the milk in a pot and add the semolina. Stir continuously till it comes to the boil. In a mixer place the egg yolks with the sugar and beat till white. You also beat the egg whites separately. You combine all when the semolina and milk are lukewarm and place it into a big deep greased tapsi (tray). Place half of the phyllo sheets underneath and the rest on top having spread the butter, on every phyllo sheet so they do not stick. Bake in a moderate oven for approximately 1 hour. When cold you add the syrup (lukewarm) and sprinkle cinnamon on top. This is lovely fresh and feeds at least 20 people. It is great for big parties. Getting to Know the Committee Marie Spiroulias & Varvara Ioannou Marie Spiroulias Marie is an FFTN committee member and General Medical Practitioner. Where were you born: Adelaide, South Australia My family originates from: Father - born in Peloponnese, Greece and came to Australia in 1956. Mother - born in Port Pirie, South Australia of Greek parents; maternal Grandfather came to Australia in 1924 from Livisi, Asia Minor and maternal Grandmother came to Australia in 1938 from Athens, Greece. My three favourite foods are: Prawns, cheese and chocolate In my spare time I: Go for beach walks and listen to music. My favourite holiday destination is: Europe particularly Italy. I am currently reading: Speed Cleaning Favourite all time film: No one favourite, however really enjoyed Brides I joined the Food For Thought Network because: To further explore my Greek roots in the company of a diverse mix of women I am passionate about...people/good conversation and music I work as a.general practitioner. The potential to have an impact on a person s physical and mental well being. This is what motivated me to study medicine. The most rewarding aspect of my chosen profession is: the privilege to communicate with people on a deeply personal level. The downside of my profession is: the frightening but inevitable position of missing a diagnosis or treating a patient incorrectly. Varvara Ioannou Varvara is the founder of FFTN and works as a HR consultant. Where were you born: Epeiros Greece, a small village called Prodromi named after Ioannis o Prodromos - the local church My family originates from: Greece - my grandma was born in the heroic Village of SOULI. Unfortunately she passed away very young and I never met her. I manage the Health and Wellbeing program in the State of Victoria. I love my job as it is in line with my personal mission of making a difference. It is an educational, positive and proactive role. I have a lot of autonomy and able to be creative. I meet many interesting people and it allows me to lead a balanced life. I get lots of positive feedback and affirmation from the employees who benefit from the strategies that we have implemented in the organisation. Find Your Light - Song by Anthea Sidiropoulos Singer/Songwriter Anthea Sidiropoulos was first diagnosed with Hodgkins Disease at the age of 29. Within the next five years Anthea underwent a stint in ICU, two recurrences and a bone marrow transplant. That was 15 years ago. Since then, Anthea has picked up her guitar and ran with the wind. Anthea has won many nominations for music and performance awards as well as producing her own CD's. Anthea continues to write her songs drawing from personal experiences of the world around her. Anthea also donates her services for community events, currently freelancing between her music, teaching and facilitating singing tuition as well as individual projects. Anthea is currently working voluntarily on the Costas Tsicaderis Tribute Concert and CD Launch as Project Coordinator for The Boite Melbourne. Here is a song she wrote in 1992 when she lost her dear friend 27 year old Maggie to breast cancer. Poem - Η Κόκκινη Άµµος - Έφη Νικολή Αχ, στο σταυροδρόµι πάλι. εν υπάρχουν πινακίδες εδώ, ούτε πυξίδες, ούτε χάρτες. Μόνο µια θέληση να συνεχίσω. εξιά η αριστερά; Μπροστά η πίσω; Βρίσκω ένα βότσαλο και κάθοµαι λίγο, κόκκινη άµµος γύρω µου. Κοιτάω πίσω και σκέπτοµαι το δρόµο που έχω κάνει, πόσο µακριά έχω περπατήσει, αλήθεια... Κλείνω τα µατιά µου και αισθάνοµαι την ζεστασιά του ήλιου πάνω στο πρόσωπο µου, νιώθω όµορφα. Έχω βρεθεί κι άλλες φορές εδώ, αγχώνοντας για το αν ή όχι θα πάρω το σωστό µονοπάτι. Κι όµως στο τέλος πάντα φτάνεις στον προορισµό σου, κάπως. Τις περισσότερες φορές, ο προορισµός αλλάζει, το µόνο σίγουρο είναι ότι θα περπατήσεις. Το σηµαντικό είναι να σε βολεύουν τα παπούτσια, και να απολαµβάνεις αυτά και αυτούς που συναντάς. Μία υπηκοότητα, µία ακόµα ταυτότητα - Ευγενίας Παυλοπούλου Τούτα τα λόγια είναι λόγια που µε κόπους 10 χρόνων γεννήθηκαν. Πριν δέκα χρόνια ήρθα σε τούτη την χώρα. Και σήµερα 10 χρόνια µετά αποφάσισα να ασπαστώ επίσηµα πλέον την υπηκοότητά της. Ϊσως να ακουστεί αβάσταχτα µελοδραµατικό, ήταν όµως ένα κατώφλι τούτη η απόφαση να γίνω Aυστραλή υπήκοος, µία διαδικασία ιδιαίτερη για την ταυτότητά µου. Όχι δεν είµαι από εκείνους τους Έλληνες που αρνούνται να πάρουν µία άλλη υπηκοότητα γιατί νοιώθουν ότι προδίδουν την µαµά πατρίδα τους. Όχι δεν είµαι από εκείνους που παίρνουν µία υπηκοότητα από ανάγκη, δεν χρειάστηκε και είµαι τυχερή που δεν χρειάστηκε. Είµαι όµως από εκείνους που θεωρούν µία ακόµα υπηκόοτητα σαν µία ακόµα ευθύνη στους ώµους τους. Και τούτη την χώρα την σεβάστηκα από την πρώτη στιγµή που πάτησα το πόδι µου σ αυτήν. Σεβάστηκα τους ανθρώπους της που κατάφερναν να γεύονται το Eλληνικό τζατζίκι το µεσηµέρι και να πίνουν το κρασάκι τους µε συντροφιά µία µερίδα κάρυ το βράδυ. Σεβάστηκα την οµορφιά της απέραντης µοναξιάς των ξερών αγρών της. Σεβάστηκα την ζωντάνια των χρωµάτων και την λατρεία προς την φύση που απεικονίζεται στα καλλιτεχνικά έργα των ιθαγενών της. Σεβάστηκα το χαµόγελο µε το οποίο εκείνο το κοριτσάκι το πρώτο πρωινό µου στην Μελβούρνη µέσα σε έναν απρόσωπο και γεµάτο βιαστικό κόσµο σούπερµάρκετ µε ρώτησε «how are you today?. Σεβάστηκα ακόµα και την πατρίδα µου την Ελλάδα πριν αποφασίσω να γίνω Aαυστραλή υπήκοος. Και επειδή την σέβοµαι αυτή την χώρα ήθελα να περάσω το κατώφλι της φιλόξενης αγκαλιάς της έτοιµη να την χαρώ. Ήθελα να την γνωρίζω πριν δεχθώ να µου κάνει την ύστατη τιµή της και να µε δεχθεί σαν δικιά της, σαν κοµµάτι της. Γι αυτό πέρασαν 10 χρόνια. Γι αυτό γέµισαν τα µάτια µου από ιερούς βράχους και παραµύθια για την εποχή του ονείρου. Γι αυτό ταξίδεψε το µυαλό µου στην πρώτη γενική επιστράτευση των παιδιών της και στην Καλλίπολη. Γιατί αυτήν την χώρα που τόσο σεβάστηκα ήθελα να την τιµήσω κιόλας. Έτσι πριν από λίγες µέρες έγινα υπήκοος και προς µεγάλη λύπη πολιτικών και άλλων συναφών δηµαγωγών δεν ξέρω ποιες είναι οι «Aυστραλιανές αξίες». Ξέρω πως οι αξίες δεν έχουν εθνικότητα ή υπηκοότητα. Οι αξίες έχουν ποιότητα και µερικές φορές υπάρχουν και από αναγκαιότητα. Όσο για την περίφηµη Eλληνική µου ταυτότητα; Πλούσια µου φαίνεται και περήφανη µε κάνει σαν Ελληνίδα που κουβαλά µέσα της Ελλάδα ενώ καταφέρνει να πλουτίζει τούτη την Eλληνικότητά της µε µία ακόµα αντίληψη για τον κόσµο, την Aυστραλιανή της αντίληψη. AN EXHIBITION FOR DEMENTIA RELATED CHRISTMAS IDEAS AND GIFTS The Christmas Treats & Gifts exhibition is now on display in the Dementia and Memory Community Centre at 100 Riversdale Road, Hawthorn. December is particularly relevant at this time of year when families who haven t seen each other for quite some time are reunited at Christmas. It is a time when some recognize changes in the behaviour of loved ones. The gifts available and suggestions for gifts are directly related to assisting families or carers in their choice of helpful gifts for people with dementia. There will be gifts available at the centre and referrals as to where others can be purchased, and of course the support system within the Dementia and Memory Community Centre of information, advice and counselling continues on a daily basis to assist people with dementia, their families and carers in coping. This newly installed exhibition runs through to 22 December. The exhibition includes: gift ideas for people with dementia, useful tips and strategies for the holiday season and an extensive display of appropriate gifts and supplier contact details. SOME USEFUL HINTS When choosing gifts for a person with dementia, consider gifts which reflect the person s past interests, engage the person, stimulate reminiscence, tap into and utilise the person s remaining strengths, such as the five senses. Sometimes the best gift can be an offer of support. I am so glad that I made the effort to go to the joint FFTN/AGM meeting on 17 th November 2006 which featured Christopher Gogos. It has been some time since I have been able to attend a meeting and I welcomed the opportunity to have a healthy and stimulating debate, with people who had passionate views on various issues. It must be the Greek in us, I might say, but, it was so pleasing to see participants of non-greek backgrounds. It was so also pleasing to see the growth of interest in the FFT group. Christopher Gogos spoke eloquently from his and Neos Kosmos' perspective. He represented many people with his views on the issue of the ethnic media, and the potential of the Greek Australian Media having an influential voice in promoting a different viewpoint and "combating racism and assimilation". I felt that the discussion amongst everyone; old members and some new visitors, was quite motivating. I noticed that we don't always have the same view on issues, but do put across our "debate/argument " in such healthy ways. To respect a person's viewpoint in such FFT forums, has been one of the key benefits in my mind of being part of such a group. Thank you also to all those present on the night for allowing me to challenge the issue of writing to the English media. It showed me that we are all prepared to take in Food For Thought...thank you. Personally, I can happily say that the guest that I invited is wanting to become a member of FFTN now after participating and observing on the night. Thank you to Varvara and her wonderful committee of intrepid women who work so hard to provide us with constant challenges, striving to improve ourselves by taking in Food For Thought.
