Fra i maestri vetrai c'era un certo Valerio di Fiandra, incaricato di terminare la vetrata con gli episodi della vita di Sant'Elena. Quest'artista era molto sapiente nel dosare e mescolare i colori; il suo segreto consisteva in un pizzico di zafferano che egli dosava con oculatezza in ogni combinazione, ottenendo effetti smaglianti. Maestro Valerio era anche un conosciuto mangiatore e bevitore; come tale, frequentava assiduamente il Bettolino de Preti, dove si smerciava il buon vino. Nel Bettolino veniva spesso la sua bellissima figliola a cercarlo. La giovane, un giorno, incontrò qui il figlio del trattore e se ne innamorò. I due si sposarono nel settembre del 1574. In occasione del pranzo di nozze, l'aiutante di Maestro Valerio lasciò cadere nel risotto una presa di zafferano. Si dice che il suo fu un gesto di gelosia per boicottare le nozze dei giovani sposi perché anche il garzone era innamorato della ragazza. Ma ottenne un risultato contrario. Tutti i commensali, con un po' di stupore e diffidenza di fronte alla nuova portata, cominciarono a servirsi e alla fine si levò un coro di lodi entusiastiche che consacrò la trovata del garzone. Il gesto di ripicca si tramutò così in un successo di gusto e bontà. Era nato il classico risotto giallo.

People said that this was a gesture of jealousy, to sabotage the wedding of the young newlyweds because he was in love with the bride too. Instead he got an opposite effect. All the wedding guests,though a bit amazed and diffident of the new course (the rice was yelow), started to eat and at the end a chorus of enthusiastic praises raised in honour of the assistant. That revenge gesture became a success of taste and goodness. The classic yellow rise was born.it became one of the typical dishes of Milan, known as Risotto alla milanese.

Sa très belle fille venait souvent le chercher au Bettolino. Un jour la jeune-fille y rencontra le fils du restaurateur et en tomba amoureuse. Les deux jeunes gens se marièrent en septembre 1574. A l occasion du repas de noces, l aide de maître Valerio fit tomber une pincée de zafran dans le riz. On dit que le sien fut un geste de jalousie, pour gâter les noces des mariés, car lui aussi, il était amoureux de la fille. Mais il obtin le résultat contairre. Tous les commensaux, un peu étonnées et méfiants devant le nouveau plat, commencèrent à se servir et finalement se leva un choeur de louanges entousiastes qui consacra l invention du garçon. Le geste de dépit se transforma ainsi en un succès de goût et de bonté. Le classique riz jaune était né.

Wśród mistrzów szkła znajdował się niejaki Valerio z Finlandii, którego zadaniem było wykończenie witraży w Duomo epizodami z życia świętej Eleny. Ten artysta znał się na mieszaniu i doborze właściwych kolorów. Jego sekretem było dosypywanie szczypty szafranu do każdej miksturze w celu uzyskania wspaniałego koloru.
