LAMPIRAN 1. Hasil Observasi dan Wawancara Pedagang Siomay di Semarang Pertanyaan : 1. Berapa jam Anda berjualan dalam sehari? 2. Bagaimana cara membuat kubis gulung yang digunakan sebagai pelengkap siomay? 3. Bagian kubis mana saja yang digunakan untuk membuat kubis gulung? 4. Berapa kali Anda mengganti kubis di dalam dandang dengan kubis yang baru? 5. Berapa suhu air di dalam dandang? Lokasi Pertanyaan Q1 Q2 Q3 Q4 Banyumanik Unika Soegijapranata Domenico Savio 8 jam dari pk 8.00 sampai pk 16.00 Kubis yang sudah dicuci bersih, dikupas tiap lembarnya lalu direbus hingga mendidih. Kemudian diangkat dan ditiriskan, lalu digulung tiap lembarnya. Lembar yang kecil digabungkan beberapa lembar baru digulung. Lalu kubis gulung yang sudah siap, sebagian dimasukkan dalam dandang dan sebagian lagi disimpan untuk nanti dimasukkan dalam dandang bila sudah habis. Semua bagian kecuali bonggol tengah yang sangat keras Tidak pasti, kalau habis baru saya 6 jam dari pk 11.00 sampai pk 17.00 Kubis yang sudah bersih dicuci, lalu dikupas tiap lembarnya. Bonggol yang susah dikupas, dipatahkan dari bagian daun dan tidak dipakai. Kemudian ke dalam air yang sudah mendidih, dicelupkan kubis ke dalamnya selama 2-3 menit sampai layu sampai mudah digulung. Setelah ditiriskan, digulung tiap lembarnya. Untuk lembaran yang terlalu kecil ditumpuk 2-3 lapis baru digulung menjadi satu. Gulungan-gulungan kubis rebus ini kemudian disimpan dalam plastik dan siap dijual. Semua bagian kecuali bonggol tengah dan batang daun yang sangat keras Tergantung habisnya, tapi biasanya jam 2 6 jam dari pk 10.00 sampai pk 16.00 Kubis dibersihkan dari lembaran luar yang jelek, busuk, dan berlubang. Kemudian dipotong bagian bonggol tengahnya. Lalu tiap lembarnya dikupas dengan bantuan pisau sampai habis. Tiap lembar dicuci kemudian direbus dalam air mendidih sampai layu. Setelah itu digulung dan disimpan dalam kotak, siap untuk dijual. Untuk lembaran yang kecil ditumpuk beberapa lapis baru digulung menjadi satu. Semua bagian kecuali lembar yang terlalu kecil tidak digunakan. Biasanya 1 jam sudah habis. Lalu saya 43

44 Q5 tambahi lagi. Yang baru saya taruh bawah yang lama saya taruh atas. Biasanya saya masukkan yang baru 4-5 kali. Pada saat kompor mati 70 0 C. Ketika ada pembeli, kompor dihidupkan sebentar suhu air 75 0 atau jam 3, saya masukkan kubis yang baru Kompor dibiarkan menyala dengan api kecil, suhu air sekitar 90 0 C. masukkan yang baru lagi, begitu habis baru saya masukkan lagi. Kira-kira 2-3 kali saya masukkan yang baru Kompor dihidupkan dengan api kecil ketika isi dandang penuh, lalu dimatikan saat isi dandang tinggal sedikit. Suhu air 85 0 C. 6.1.
